I put together a healthy Slow Cooker Meal Plan with a grocery list for us to start the new year. It’s going to help us cook healthier for ourselves and our families, save time, and sanity!
Friends, I know you are 100% capable of planning your meals. You are beyond amazing!
But, sometimes it’s really nice to sit back and have someone else do the work. That's why I'm here and hopefully, why you'll stick around!
I've compiled a week's worth of healthy, wholesome slow cooker meals that you’ll feel good about feeding yourself and your family.
Meal Plan with Grocery List
The holidays have been a foodie’s dream. All sorts of baked goods, hearty foods and uh-oh...my pants won’t zip anymore!
Whether you’re right there with me embracing the stretchy pants (hands are waving in the air, ya'll!) or you're just looking for some easy meals to get you back on track...You’ll love these simple, delicious and healthy slow cooker meals.
Now, normally I don’t plan for seven dinners throughout the week.
Usually that leads to plans that fall apart and wasted groceries (and money).
But since we’re basically hunkered down here in Northern Illinois and it’s winter, I’ll make an exception to the rule. Plus, to keep on track with healthy eating, I'll be using the leftovers for lunch.
Why I love meal planning for leftovers:
- I can manage (ahem, reduce) the amount time I’m tethered to the kitchen
- Most family members seem allergic to leftovers. On the positive side, I'm perfectly happy to eat leftovers.
- Since these are healthy dinners, they're healthier lunches, too!
- We'll spend less time thinking about we'll be eating (this cannot just be me. Please, tell me it's not me!)
- Ummm, it goes without saying that you'll save on dish washing. That's a total win!
Why did I only plan for dinner?
If I could read every single person's mind about what they wanted to eat for breakfast, lunch and dinner, well....that'd be just plain creepy.
Heck, I don't know what I want to eat for breakfast more of the time!
Instead, in the interest of keeping things realistic, I made a meal plan with a grocery list so you can have dinner on the table every night, plus leftovers for lunch the next day.
And a breakfast for the crockpot, too. Boom.
This meal plan has six dinner recipes and each serves about four plus adults.
Because I’m keeping things super simple, this meal plan is entirely based around the slow cooker.
It’s to help get veggies into our meal plan, warm us from the inside out, and nourish, too!

I used the Plan to Eat app to make my grocery list so you can see what ingredients go with which meal. That'll make it easy to switch things out.

Slow Cooker Meal Plan Recipes:
Meal 1: Stuffed Pepper Soup
Everything you need for a meal is in a bowl! Protein and veggies, all in a bowl. This one is a meal in itself, in my opinion.
Meal 2: Crockpot Mexican Shredded Chicken
This shredded chicken can be made into burrito bowls, tacos, quesadillas...you name it! Add whatever you want to go with it to your grocery list. Avocado, salsa, some shredded cheese - yum!
P.S. Leftovers would be amazing on a Mexican Chopped Salad. (note: the ingredients for this salad are not included)
Meal 3: Pulled Pork Lettuce Wraps
These low carb wraps are so tasty! If lettuce wraps aren't your thing, use leftover soft tortillas from your Mexican shredded chicken!
Meal 4: Minestrone Soup
This soup has an assortment of veggies and is sure to warm you from the inside out. Add some crusty bread or salad. Simple is best with this meal!
Meal 5: Slow Cooker Healthy Meat Sauce
Ground beef meets healthy veggies. Serve over spaghetti, penne or zucchini noodles.
Meal 6: Honey Garlic Chicken and Veggies
A full flavored sauce makes this not your average chicken and vegetables
Breakfast: Apple Cinnamon Oatmeal
Bake this overnight and you can wake to the smell of apple pie. Breakfast is served!

Disappointed that this is titled as a healthy -slow cooker- meal plan when the stuffed pepper soup is made in the instant pot. Seems misleading and I didn’t realize until I had purchased the ingredients and started to prep. The intention was for easy meals for my sister in law post partum but it has multiple steps that I wouldn’t ask her to do with two toddlers and an infant the week after giving birth. Could definitely benefit from being retitled or at least titling that recipe differently.
