Ingredients
The traditional pairing of tender roast beef and zest play well in this recipe! My mom and I usually share a jar of horseradish because a little bit goes a long way.
- deli roast beef - alternatively you can use leftover roast beef from pot roast or Instant Pot Sauerbraten.
- horseradish cream sauce - this creamy and zesty sauce is made a little bit healthier by using nonfat Greek yogurt, a few tablespoons of mayonnaise and some grated horseradish. Use your leftover horseradish to pair with beef tenderloin.
flour tortillas
deli roast beef - I ask for mine to be sliced.
cheddar cheese - you can shred your own cheese or use the pre-shredded kind.
lettuce - bibb or romaine both work nice.
How to make roast beef wraps
Make the creamy horseradish sauce. Mix equal parts Greek yogurt and mayonnaise. Add just a smidge of horseradish sauce.
Slightly warm tortillas so they're pliable. Lay flat and spread with horseradish cream sauce. Add lettuce, cheese and roast beef to each wrap.
Wrap, burrito style by folding the sides in and then rolling into an enclosed wrap.
Cut in half and serve.
Farm Girl Tip: If you’re making these as a field meal or packed in a lunch, I add the lettuce as the bottom layer (next to the tortilla) and then put on the sauce so the roast beef roll ups don’t get soggy.

- Tortillas - substituting a whole grain tortilla or a low-carb variety. Or, go crazy and make your own tortillas. We all seem to be baking up a storm these days!
Horseradish - this isn’t everyone’s cuppa tea. Omit if that’s your preference, or your family members preference. - Lettuce - use any type of lettuce, mixed greens or baby spinach
