This buffalo chicken recipe is so easy and I happen to LOVE all things buffalo seasoned. This crock pot recipe is an amazing protein for meal prep, because so much can be done with it!

I'm going a little Forrest Gump here but you will find me making buffalo cauliflower bites, buffalo chicken spaghetti squash casserole, buffalo chicken meatballs, shredded buffalo chicken wraps, ....you name it, and I've probably made it!
Crock pot Shredded Buffalo Chicken
Who doesn't love a crockpot? They're the secret weapon of farm wives nation wide. Because most farm wives I know are working during the day and dashing in right around dinnertime.
We need all the kitchen tools at our disposal. So of course, I love that I can make this buffalo chicken in the crockpot!
This is also a versatile game day recipe, perfect for football season and tailgating!
And, the recipe is 8 Weight Watchers points.
How to Make Buffalo Shredded Chicken
You can make Buffalo Shredded Chicken in the slow cooker or Instant Pot. The slow cooker is probably my favorite method because I can start it early in my day and clean up the kitchen!
To make in the slow cooker: Add all the ingredients except the cream cheese to the slow cooker and let it get to work!
Once the chicken is cooked (after several hours) shred the chicken and add it back to the pot. Add the cream cheese and stir in to melt it.
Recipe Tips
- Use whatever buffalo sauce you prefer for your slow cooker buffalo chicken. My fav is Frank's Red Hot.
- This can be made ahead of time as a freezer meal, then thawed and cooked.
- Use more sauce for extra spicy, less sauce for less spicy.
What to make with shredded buffalo chicken
If your mouth isn't watering yet, let's see what we can do here! You can use shredded buffalo chicken to make:
- Buffalo Chicken Salad. Top with a drizzle of ranch dressing and some creamy avocado slices. Yum!
- Serve in lettuce cups or in a low carb or whole grain tortilla for an easy lunch!
- Use it to make buffalo chicken tacos! In case you have't noticed, taco anything is my love language.
How do you shred buffalo chicken?
You can remove your buffalo chicken from the slow cooker and shred with two forks.
Another alternative - put it into your stand mixer and let the paddle attachment do the shredding.
Tip: I like to put a paper plate over the top to keep food from flying out the of the mixer!
What to serve with shredded buffalo chicken
I like to serve something cool to bring the heat down just a little, like Coleslaw with Apples, Cranberries, Almonds & Maple Vinaigrette or No Mayo Potato Salad.

- 2 pounds boneless skinless chicken breasts
- ⅔ cup hot pepper sauce, such as Frank's RedHot
- 2 T unsalted butter
- 1 tablespoons white vinegar
- ¼ teaspoon Worcestershire sauce
- ¼ teaspoon cayenne pepper
- ⅛ teaspoon garlic powder
- salt to taste
- 4 ounces cream cheese
- Ranch dressing, for topping (optional)
Instructions
TO COOK RIGHT AWAY
- Combine all ingredients EXCEPT cream cheese in a crockpot.
- Cook for 4-5 hours on low until chicken is cooked through. Remove chicken to shred with two forks or using an electric mixer.
- Return to sauce mixture add cream cheese. Stir until cream cheese is melted and incorporated.
TO MAKE AS A FREEZER MEAL
- In a gallon sized ziplock bag, add all ingredients EXCEPT for cream cheese. Set aside cream cheese for cooking day. Remove excess air and freeze flat.
TO COOK FROM FROZEN
- Place bag contents into a crockpot. Cook 4-5 hours on low until chicken is cooked through. Remove chicken to shred with two forks or using an electric mixer.
- Return to sauce mixture add cream cheese. Stir until cream cheese is melted and incorporated.
Notes
This shredded chicken is great for pulled chicken sandwiches, wraps or buffalo chicken nachos!
