Portable: Adding the pork to a sandwich wrap is an important detail because some of the people I love the most enjoy driving and eating at the same time.

Well making this into a pulled pork wrap means less spillage. They're perfect if you're feeding people on the go (hello, baseball and planting season!) or want something to eat besides a typical sandwich.

- Leftover pulled pork - We have this on hand a few times per month and I'm always looking for ways to give it new life. Tip: Use the leftover tortillas to make breakfast burritos.
- Flour tortillas - You'll want to grab the big, burrito sized version. You can also use low carb tortillas, whole grain, flat out wraps....you get the idea.
- Coleslaw - You can make your own coleslaw, but we are in planting season here on the farm. I added some deli coleslaw to my grocery order because I've got enough going on! Take the help when you can, right???
- Bbq sauce - I'm listing this as optional if your leftover pulled pork doesn't already have sauce. You can also serve some up for dipping!
How to make pulled pork wraps
Before you get started, warm your leftover pulled pork in the microwave or in a small pot on the stovetop over medium heat.
Step 1: Assembly. Lay tortilla on your work surface. Spoon ¼ of the pulled pork down the center, leaving space of least an inch on each side.
Step 2: Spoon ¼ of the coleslaw on top of the pulled pork.
Fold the bottom of the tortilla up. Wrap the left and right sides of the tortilla in and then roll, burrito style until the pulled pork wrap is enclosed.
Repeat with the remaining tortillas.
Variations
I kept my pulled pork wraps to three ingredients, but you can add more to your heart's content! Shredded cheddar cheese, fresh cilantro, French fried onions, or additional barbecue sauce are all delicious additions.
Serving Suggestions
What goes well with pulled pork? We love serving up some old fashioned baked beans or Mexican street corn dip.
These pork wraps are best served fresh. If you're making them ahead of time, I'd leave off the coleslaw or they'll get soggy and won't reheat well.
Leftover Pulled Pork Wraps
Ingredients
- 16 ounces leftover pulled pork or store bought
- 1.5 cup prepared coleslaw
- 4 large flour tortilla
- 4 Tablespoons bbq sauce optional
