Okay, let's be honest. The number one reason I love this pork stir fry is because it's quick and easy to prepare. Hello, weeknight dinner!
It's also one of the dishes I like to serve to my farmers, even when they're working in the field. There's no knife required so it passes the field meal test!
But here are a few other reasons I love this easy recipe.
Balanced Meal: It's a balanced meal that combines lean protein (pork), a variety of vegetables, and a flavorful sauce. This makes it a well-rounded dish the whole family will like. It's also a great way to get your kids to eat their veggies.
Economical: Pork is often an affordable meat option, making it budget-friendly. You can create a delicious and satisfying meal without breaking the bank. Trust me, this one pot wonder is going on repeat.
I like serving my pork stir fry up with some slow cooker brown rice.
Ingredients
We're gonna rock this pork stir fry using frozen vegetables.
- soy sauce - I like using reduced sodium soy sauce in this recipe.
- honey and garlic - make a simple homemade stir fry sauce.
- pork tenderloin - Boneless pork tenderloin is lean and tender. We'll slice it into thin strips so it cooks quickly. If you have extra pork tenderloin, use it to make another weeknight meal like my Pork Tenderloin Sheet Pan Dinner.
- frozen stir fry vegetable blend - Frozen stir fry vegetables are readily available in the supermarket and come in a variety of combinations. Often the blends include snow peas, water chestnuts, green beans, carrots or other vegetables.
Tip: I figure using pre-cut veggies saved me about a hour worth of veggie washing, peeling and chopping.
Substitutions
Pork tenderloin can be substituted with other protein like chicken, beef or shrimp.
Stir fries are flexible, so use whatever vegetables are on sale at the grocery store, or whatever your family likes. Common stir-fry vegetables include bell peppers, broccoli, snap peas, carrots, mushrooms, zucchini, and bok choy.
You can also incorporate leafy greens like spinach or kale. You can use fresh veggies if you prefer.
If you want to make a gluten-free pork stir fry, substitute soy sauce with low-sodium soy sauce, tamari (gluten-free soy sauce), or coconut aminos.
While I used olive oil, you can substitute vegetable oil, peanut oil, sesame oil or coconut oil for different flavor profiles.
How to make an easy pork stir fry
Step 1: In a small bowl, mix soy sauce, water, garlic, honey and cornstarch. Set aside.
Step 2: Prep the pork by slicing the tenderloin in half lengthwise to make 2 pieces. Then, slice each piece into smaller slices approximately ¼ inch thick.
Heat a large skillet over medium high heat. Add oil to lightly coat the pan.
Add pork pieces and cook, stirring, until the pork is almost completely cooked, about 4 minutes.
Step 3: Add frozen veggies to the pan and cook over medium high heat until thawed and no longer frozen.
Step 4: Once the veggies are cooked through to crisp tender and no longer frozen, add the homemade stir fry sauce.
Increase the heat to high.
Cook, stirring constantly, until the mixture begins to boil. Reduce heat to low and cook for 1-2 minutes.
Remove from heat. Sauce will thicken and coat the stir fry as it cools.
BOOM - dinner is served!
Variations
Sauce: Play around with different sauces to change the flavors of your stir fry. You can use teriyaki sauce, oyster sauce, hoisin sauce or sweet and sour sauce.
Nuts: Add some tasty crunch and big flavor by including toasted nuts or seeds like almonds, cashews, peanuts or toasted sesame seeds.
Spices: You can experiment with different spices and seasonings. Spices such as ginger, garlic, chili flakes, Chinese five-spice powder, or curry powder all pair well with this recipe.
Herbs: Get all fancy pants and add fresh herbs like like cilantro, basil, or mint to your cooked stir fry.

You're in luck! The water in the stir fry sauce keeps moisture in the recipe, while the cornstarch helps to seal in the juices on the pieces of pork.
Pork tenderloin is the leanest cut of pork for stir fry. You can also use pork shoulder or pork butt.

Hi Joshua, when you bring the stir fry sauce to a boil it and then reduce to a simmer for a few minutes it should thicken - as it activates the cornstarch which is the thickener.
