When I'm serving up field meals, buffalo chicken sliders are always a hit with our friends and family! They’re easy to make, delicious, and make the perfect handheld eat.

Why you'll love this recipe
Juicy and tender shredded chicken tossed in spicy buffalo sauce and sweet Hawaiian rolls...What's not to love?
Pair that with the fact that sliders are a known go-to recipe for on the go meals and we are making these on the regular here on the farm.
You don't have to live on a farm to enjoy these tasty sandwiches, though. Our college kids have been known to make them, too. They're that easy!
Any hey - If you love buffalo chicken you'll also love these buffalo chicken egg rolls and buffalo chicken stuffed peppers.
Ingredients
Here's what you need to make these spicy chicken sliders.
- Cooked, shredded chicken - I use chicken breast in this recipe. I like to make a big batch of chicken in the slow cooker or make a whole chicken in the Instant Pot and use it for multiple meals throughout the week. Rotisserie chicken from the grocery store works too!
- Hawaiian Rolls or slider buns: Hawaiian dinner rolls are pillowy soft and sweet. Our kids generally pop them into their mouths like candy at every holiday meal in an effort to bypass the main meal we've prepared.
- Buffalo Sauce - You can buy this at the store or use homemade buffalo sauce. We really like Sweet Baby Ray's brand. This is a little different than regular hot sauce as it's tempered with a little garlic and butter. Slow Cooker Buffalo Chicken Dip and Buffalo Shrimp Tacos are the perfect use for your leftover buffalo sauce.
- Shredded mozzarella cheese - The perfect mellow fellow to add to the heat.
Feeling ambitious? You can make your own Homemade Hawaiian Rolls!
How to make buffalo chicken sliders
- Step 1: Using a serrated knife, cut the Hawaiian rolls in half horizontally. Note: keep the rolls in tact; don't pul them apart.
- Step 2: Top with shredded mozzarella cheese. Spread it evenly across the buns.
- Step 3: Spread the shredded chicken mixed with buffalo sauce over the buns.
- Step 4: Place the top of the buns on the sliders.
- Step 5: Brush the tops with ranch dressing.
- Step 6: Bake until the tops are toasty and the cheese is melted. I like to serve with additional ranch dressing and maybe a pickle or two. If blue cheese dressing is your thing, then go with that!
Top Tip
Not all Hawaiian rolls are the same size. Check out the variations at the grocery store!

Variations
- Get cheesy - Switch out the mozarella for cheddar cheese or Monterey Jack Cheese. Like it hot? Use pepper jack cheese for some adding zing.
- Have leftover buffalo chicken dip? Use it as the chicken spread for these sliders.

What to serve with easy buffalo chicken sliders:
I like to serve hot chicken sliders with coleslaw, potato chips or creamy potato salad.
And of course, you can't go wrong with French fries or air fryer sweet potato wedges.
