This meal will only require five ingredients to get the job done! Start the soup and let it cook while getting other things done around the house (because everyone's busy, right?)
- dried onion flakes - Dried onion flakes are a great alternative to fresh onions because it can be stored in the pantry, isn't perishable, and you won't need to chop onions for this recipe.
- alphabet pasta - Alphabet pasta is a fun element of this dish. This can make dinner time engaging especially if you have young kiddos. Use this as a learning opportunity. And if you don't - well, you can be taken down memory lane to when you used to eat alphabet pasta.
- frozen veggies - One tip that I have for you is to always keep a couple bags of frozen veggies on hand. They'll come in handy for this recipe, but also for convenient side dishes when you don't know what to pair with dinner one night.
- tomato sauce - The tomato sauce is the thickening component of the soup so it isn't as runny as water. The tomato sauce also adds some nice flavor and color to the soup.
- ground beef - Ground beef recipes are my go-to! We raise a few beef cattle so our freezer is always stocked. stock up our freezer about once a year. Don't forget to set out your ground beef to defrost for quicker cook time! And if you forget, you can cook your frozen ground beef in the Instant Pot.
Substitutions
- If you don't have alphabet pasta laying around, or would prefer a different type of pasta you can try penne, rotini, elbow macaroni, or whatever you'd like.
- If you have dietary restrictions/preferences, ground turkey would be a great alternative that is lower in fat.
- Around here, we are flexible. If you don't have a frozen mixed veggie bag, any vegetable good for soup will do. Green beans, corn, carrots, peas. You can use fresh, frozen or canned!
How to make Hamburger Vegetable Soup
This recipe is very simple. Get it all going, and go back to whatever you were doing while it heats up!
Step #1: Put a large pot on the stove over medium heat. Next, toss in ground beef, onion, salt and pepper. Break up the meat as it cooks. Once there is no pink remaining and the beef is fully cooked, drain if needed. Put back in pan.
Step #2: Next, add frozen veggie mix, tomato sauce and water. Stir to mix it all up.
Step #3: Pour in alphabet pasta, turn down the heat to low and cook until the pasta is tender. Taste test and adjust seasonings.
Tip: You can cook beef ahead of time and keep it in the refrigerator so when you start cooking, it just needs to be warmed.
Variations
Add chickpeas: Add some additional fiber and protein through chickpeas in your soup.
Potato Soup Hybrid: If you love potatoes, add diced potatoes to make this soup even more hearty.
Mexican-twist: Add black beans, corn, diced tomatoes with green chilies, and Mexican spices such as chili powder, paprika and cumin to add a Mexican inspired twist to this vegetable soup. Top with cheese, sour cream or cilantro.
Top tip
This is a perfect recipe to double up and freeze soup in mason jars. The next time a soup craving hits, defrost from the freezer and heat it up!

Ingredients
- 1 pound lean ground beef
- 15 ounce can tomato sauce
- 5 cups water
- 12 ounces frozen mixed vegetables
- 1 Tablespoon dry minced onion
- ½ cup alphabet pasta
- Salt & black pepper to taste
Instructions
- Heat a large pot over medium high heat. Add the ground beef, onion, salt and pepper. Cook, breaking the meat into pieces as it cooks. Once the meat is cooked through and no longer pink, drain any grease if necessary. Return to the pan.
- Add the frozen vegetables, tomato sauce and water. Stir to combine.
- Mix in alphabet pasta, reduce heat to low and simmer until the pasta is tender.
