Ingredients
You probably have most of these ingredients in your pantry for fridge, but you will need to grab a few ingredients at the grocery store. Let’s dive in…
Pork tenderloin - the tenderloin is a thin and lean cut of pork. Sometimes you’ll see them sold as a two pack, which works perfect for this recipe. You’ll need a pound and a half for this recipe.
If you find yourself stumped in the meat aisle at the grocery store, just remember that a pork tenderloin is different than a pork loin. A pork loin is more like a Sunday roast - it’s larger. If you have leftovers, make this Pork Tenderloin Sheet Pan Dinner!
Red bell pepper - The red peppers have tons of vitamin C in them, making them ideal for this recipe. With that said, I’m not the food police so if you have a yellow or orange bell pepper, you can totally use them in this recipe instead.
Cashews - these nuts add a nice flavor component and they’re a little, well - nutty! I use raw, unsalted cashews that I picked up at Costco.
Bok choy - don’t freak out over this one, folks! It sounds fancy but really similar to cabbage. The lower part is a little crunchy - think of celery but better - and the leaves cook up tender and chewy. This veggie component adds some texture and a little crunch from the white parts of the bok choy.

How to make keto pork stir fry
Step 1: Use a large skillet to make my stir fry but you can of course use a wok if you have one.
Heat olive oil, add pork in two batches, if necessary. What you don't want to do here is crowd the pan! Cook the pork for 2-3 minutes per side until they're lightly browned.
Step 2: Add the bell pepper, green onion, ginger, cashews and garlic powder.
Stir fry the veggies until they become crisp-tender, around 2-3 minutes.
Step 3: Add the bok choy, sesame oil, and soy sauce.
Continue to stir fry until the bok choy wilts and the other ingredients coat the entire dish, approximately 1-2 minutes.
Remove from heat and transfer to individual serving plates. Garnish with toasted sesame seeds, if desired, and serve immediately.
Variations
Protein: Sub in chicken breast, chicken thighs, or beef sirloin strips for the pork.
Make it spicy by adding a pinch of red pepper flakes.

Instructions

Hi I have this on my menu to make I wondered if I could throw it right in my slowcooker? Currently have a broken knee and can't stand for long periods of time. So skillet and me aren't friends lol. If so would I increase the cooking time?

This is one of the best stir fry recipes I’ve ever made! I’m on COVID-19 lockdown and had to cook with what I had ion hand. I doubled the recipe. I didn’t have bok Choy so I used sliced zucchini.
