It's Easy. It's Stir Fry. And it's Pork. It's Easy Pork Stir Fry, and it's a quick and easy way to get dinner on the table in under 30 minutes.
It's also one of the dishes I like to serve to my farmers, even when they're working in the field. There's no knife required so it passes the field meal test!
Plus, it's a one pot meal so less dishes to wash!
Rock this Easy Pork Stir Fry with frozen vegetables
Yes, you heard me right.
We are using frozen vegetables in this recipe.
You all know I love a good shortcut! I use them in this recipe as well as in my Asian Cabbage Salad recipe!
Frozen stir fry vegetables are readily available in the supermarket and come in a variety of combinations. I used a Bird's Eye brand variety shown here.
I figure it saved me about a hour worth of veggie washing, peeling and chopping. And, frozen vegetables are just as healthy as frozen.
What's not to like??
Pork tenderloin cooks quickly. First we're slicing it in half lengthwise, then cutting it crosswise to get bite size pieces.
The pork pieces cook nice and fast, and then we'll remove them to get the veggies cooking.
To make the pork stir-fry marinade.
Once the veggies are cooked through and no longer frozen, we put the pork stir fry back into the pan. Add the mixture of soy sauce, garlic, cornstarch (to thicken the marinade a bit), honey and water.
Cook a little bit to thicken up the stir fry sauce and BOOM - dinner is served.
Serve over a bed of Slow Cooker Brown Rice
Kids are happy, parents are happy and all is right with the world.

Easy Pork Stir Fry
Ingredients
- ¼ cup reduced sodium soy sauce
- 1 teaspoon minced garlic
- ½ cup water
- ¼ cup honey
- 1 tablespoon cornstarch
- 1 pound pork tenderloin
- 1 tablespoon olive oil
- 24 ounces frozen stir-fry vegetable blend
Instructions
- In a small bowl, mix soy sauce, water, garlic, honey and cornstarch. Set aside.
- Slice the tenderloin in half lengthwise to make 2 pieces, then slice into smaller slices approximately ¼ inch thick. Set aside.
- Heat a large skillet over medium high heat. Add oil to lightly coat the pan. Add pork pieces and cook, stirring, until the pork is almost completely cooked, about 4 minutes.
- Add frozen veggies to the pan and cook over medium high heat until thawed and no longer frozen.
- Increase the heat to high. Add the stir fry sauce to the pan and cook over high heat, stirring constantly, until the mixture begins to boil. Reduce heat to low and cook for 1-2 minutes. Remove from heat. Sauce will thicken and coat the stir fry as it cools.

quick question, my sauce was pretty watery still. how thick should it get?

Hi Joshua, when you bring the stir fry sauce to a boil it and then reduce to a simmer for a few minutes it should thicken - as it activates the cornstarch which is the thickener.
