🛒 INGREDIENTS
You'll only need a few things to make this dinner recipe. Check your spice cabinet before heading to the grocery store.

- pork chops - Pork is a tender and flavorful protein perfect for feeding your family. For this recipe, you can use bone-in pork chops or boneless pork chops. Just make sure they're at least ¾" thick. Pork is packed with protein. Eating 20 – 30 grams of protein per meal helps fuel your body and may help you feel fuller. That being said, every 3 ounces of pork is packed full of 22 – 24 grams of protein depending on the cut.
- red potatoes - I used red potatoes but you can also use Yukon gold, baby potatoes or any other thin skinned potatoes.
- seasonings
- vegetable oil - this helps the seasoning adhere to the potatoes. You can also use canola oil or olive oil.

Best Potatoes for Baking
You can make this recipe with a variety of potatoes. Here's a reference of which ones to use.
- Yukon gold - this is perfect if you love a thin skinned, creamy potato. There's no need to peel.
- Red potatoes - great because they hold their shape and don't turn to mush when cooked. They're perfefct for this recipe
- Russet - these are the ones you think of when you're looking for steakhouse potatoes. The skins are a little thicker and the texture cooks up fluffy.
🥣 How to make pork chops and potatoes in the oven
Before you get started, preheat your oven to 400°F. Grab a large cast iron skillet, oven-safe skillet, or rimmed baking sheet.

- Make a seasoning blend by combining garlic powder, smoked paprika, salt and black pepper.

- Step 2: Pat the pork chops dry with a paper towel. Season both sides of the pork chop with half of the seasoning you made.
Note: Drying the pork chops will help the seasoning adhere better and help the pork chops to brown rather than steam.
Save This Recipe For Later

- Step 3: Cut washed potatoes into 1-inch chunks. Drizzle with olive oil and toss with the remaining seasoning.
Add the potatoes to the pan and bake for 20 minutes.

- After 20 minutes, lay the pork chops on top of the potatoes in a single layer.
Cook an additional 15-18 minutes, or until chops are cooked through to a temperature of 145°F.

How Do You Keep Pork Chops From Drying Out?
- don’t overcook - use a meat thermometer and not just cook time.
- use bone-in pork chops if possible
- bake covered first if it looks like the pork is drying out.

Spices are the best way to mix up this pork chop recipe.
- Sage or thyme are classic pairings with pork and you can easily add one of these dried spices to your pork chop dinner.
- For a Mediterranean twist, try making the same recipe with lemon zest and dried oregano. This combo is bright and herbaceous!

Ingredients
- 4 pork chops ¾" thickness
- 2 ½ pounds red potatoes
- 1 teaspoon salt
- 1 teaspoon garlic powder
- ½ teaspoon black pepper
- ¼ teaspoon smoked paprika
- 1 ½ Tablespoons vegetable oil
Instructions
- Preheat oven to 400°F.
- Make a seasoning blend. In a small bowl stir together 1 teaspoon salt, 1 teaspoon garlic powder, ½ teaspoon black pepper and ¼ teaspoon smoked paprika.
- Pat 4 pork chops dry with a paper towel, place on a clean plate. Season both sides of the chops with half of the seasoning mix (about ⅛ teaspoon per side).
- Wash 2 ½ pounds red potatoes to remove any debris. Cut into 1-inch pieces and place in a large bowl. Add 1 ½ Tablespoons vegetable oil to potatoes and toss to coat. Sprinkle potatoes with remaining seasoning.
- Add potatoes to a large cast iron skillet or sheet pan. Bake potatoes for 20 minutes.
- Remove pan from oven and carefully mix potatoes. Place chops on top of the potatoes in a single layer. Return pan to oven and bake an additional 15-18 minutes, or until chops are cooked through to a temperature of 145°F.
Notes
- Oil: Olive oil or melted butter can be substituted for vegetable oil.
- Potatoes: Russet, Yukon golds, halved baby potatoes, or even sweet potatoes can be substituted for red in this recipe.
- Pork Chops: Boneless pork chops can be used in this recipe. If pork chops are thicker than ¾" thick, you will need additional cook time. Use a meat thermometer to check for a temperature of 145°.
- This recipe used a cast iron skillet, but almost any oven safe dish would work. A rimmed cookie sheet or a 9x13 dish would all work for this recipe.
- Boneless pork chops can be used in place of bone-in.
