Easy Summer Corn Salad Recipe is a summer salad you'll make all season long. It's a side dish full of sweet corn, ripe tomatoes, salty feta cheese & more!
Maybe it's my Midwest upbringing but when I think of summertime, I start thinking of sweet corn and homemade summer corn salad.
Fresh corn salad recipes practically scream summertime!
Now, before you freak out, yes; I did say this summer corn salad with cilantro. People either love cilantro or hate it; there's really no in between. So if you can't stand it, by all means, leave it out!
No harm, no foul.
How to make summer corn salad with tomatoes
I have good news for you....this easy corn salad uses fresh corn during the summertime, but can use frozen corn in the off season. It's a winning recipe either way!
Make the dressing: In a bowl, whisk the lime juice, cumin, chili powder and olive oil together. Taste and adjust seasoning with a little salt and pepper. Set aside.
If you're using fresh corn, cut it off the cob to start. If you're using frozen corn, add it directly to the hot skillet.
Tip: This is also a great way to use leftover air fryer corn on the cob!
Heat a skillet, add the corn and char the kernels slightly, stirring occasionally.
Remove the corn from the heat and place in a serving bowl.
Add the tomatoes, onion, cilantro (only if you want, no pressure!), feta cheese and dressing.
Toss to coat and serve immediately.
What food products are made from corn?
I think it's worth mentioning that we farm corn and soybeans on our farm here in Illinois. One of the crops we grow here is corn, but it's not sweet corn like the kind used in this recipe.
The type of corn we plant and harvest is field corn and it's used for things like:
- animal feed for cattle, pigs, poultry and fish
- use in cereals, salad dressings, soft drink sweeteners, taco shells, corn meal, corn syrups and more.
- industrial products like soaps, paints, solvents, and other starch based products
- ethanol fuel
So while both are useful, the corn you use in this simple grilled corn salad is sweet corn.
And I've gotta say, this corn salad is perfect for your next summer party!
Summer Corn Salad Variations
- Use fresh sweet corn and lightly char it on the grill before cutting off the kernels.
- Substitute another fresh herb for the cilantro, such as flat leaf parsley

Summer Corn Salad with Tomatoes
Ingredients
To make the dressing:
- 2 Tablespoons lime juice
- 2 teaspoon cumin
- 1 teaspoon chili powder
- ¾ cup olive oil
- salt & pepper to taste
Salad Ingredients:
- 3 cups frozen or fresh corn kernels
- 2 cups grape tomatoes halved
- ¼ cup red onion diced
- ¼ cup cilantro chopped
- ¼ cup feta cheese crumbles
Instructions
Make the Dressing:
