Ingredients

To make the dressing:

  • 2 Tablespoons lime juice
  • 2 teaspoons cumin
  • 1 teaspoon chili powder
  • ¾ cup olive oil
  • salt & pepper to taste

Salad Ingredients:

  • 3 cups frozen or fresh corn kernels
  • 2 cups grape tomatoes halved
  • ¼ cup red onion diced
  • ¼ cup flat leaf parsley chopped
  • ¼ cup feta cheese crumbled

Instructions

  • Make the dressing: In a bowl, whisk 2 Tablespoons lime juice, 2 teaspoons cumin, 1 teaspoon chili powder, ¾ cup olive oil and salt & pepper to taste.

  • Make the salad: Add 3 cups frozen or fresh corn kernels to a medium sized bowl.
    *If using frozen corn, thaw and pat dry. If using fresh corn, use a sharp knife to cut the kernels from the cob.Leftover sweet corn works really well for this recipe.

  • Add 2 cups grape tomatoes, ¼ cup red onion, ¼ cup flat leaf parsley and ¼ cup feta cheese.
    Add the dressing and gently toss to coat. Serve and enjoy!

Notes

Fresh sweet corn is especially delicious during peak summer months. Canned corn can be used in an emergency  - be sure to drain it well.
For a crisp, fresh texture, leave the corn uncooked. If you'd like a little color and sweetness, heat a skillet over medium high heat and cook the corn for 3–4 minutes, stirring occasionally.
Cotija cheese can be substituted for feta and basil or cilantro may be substituted for the parsley.

Can you make summer corn salad ahead of time?

Yes! You can prep the ingredients and dressing up to a day ahead. For best results, wait to add the dressing and feta cheese until shortly before serving.
