To make the dressing:
- 2 Tablespoons lime juice
- 2 teaspoons cumin
- 1 teaspoon chili powder
- ¾ cup olive oil
- salt & pepper to taste
Salad Ingredients:
- 3 cups frozen or fresh corn kernels
- 2 cups grape tomatoes halved
- ¼ cup red onion diced
- ¼ cup flat leaf parsley chopped
- ¼ cup feta cheese crumbled
Make the dressing: In a bowl, whisk 2 Tablespoons lime juice, 2 teaspoons cumin, 1 teaspoon chili powder, ¾ cup olive oil and salt & pepper to taste.

Make the salad: Add 3 cups frozen or fresh corn kernels to a medium sized bowl. *If using frozen corn, thaw and pat dry. If using fresh corn, use a sharp knife to cut the kernels from the cob.Leftover sweet corn works really well for this recipe. 3 cups frozen or fresh corn kernels

Cotija cheese can be substituted for feta and basil or cilantro may be substituted for the parsley.
