Oven Baked Pork Chops and Potatoes

  • Preheat oven to 400°F.
  • Make a seasoning blend. In a small bowl stir together 1 teaspoon salt, 1 teaspoon garlic powder, ½ teaspoon black pepper and ¼ teaspoon smoked paprika.
  • Pat 4 pork chops dry with a paper towel, place on a clean plate.  Season both sides of the chops with half of the seasoning mix (about ⅛ teaspoon per side).
  • Wash 2 ½ pounds red potatoes to remove any debris.  Cut into 1-inch pieces and place in a large bowl.  Add 1 ½ Tablespoons vegetable oil to potatoes and toss to coat. 
    Sprinkle potatoes with remaining seasoning.
  • Add potatoes to a large cast iron skillet or sheet pan.  Bake potatoes for 20 minutes.
  • Remove pan from oven and carefully mix potatoes. Place chops on top of the potatoes in a single layer.  Return pan to oven and bake an additional 15-18 minutes, or until chops are cooked through to a temperature of 145°F.

Notes

Leftovers: store covered in the refrigerator for up to 3 days.
Substitutions
  • Oil: Olive oil or melted butter can be substituted for vegetable oil.
  • Potatoes: Russet, Yukon golds, halved baby potatoes, or even sweet potatoes can be substituted for red in this recipe.
  • Pork Chops: Boneless pork chops can be used in this recipe. If pork chops are thicker than ¾" thick, you will need additional cook time. Use a meat thermometer to check for a temperature of 145°. 
  • This recipe used a cast iron skillet, but almost any oven safe dish would work.  A rimmed cookie sheet or a 9x13 dish would all work for this recipe.
  • Boneless pork chops can be used in place of bone-in.
