Step-by-Step Instructions

Step 1: Brown the sausage. In a big skillet, cook until no longer pink. Drain any excess grease.

Step 2: Sauté the veggies. Toss in onion, celery, and bell pepper. Cook until tender, then add garlic for another minute.

Traditionally, it gets its “dirty” look from chicken livers mixed in with the rice. My version keeps things family-friendly with sausage, but still delivers big Cajun flavor.

Easy Dirty Rice with Sausage

Ingredients
- 1 pound ground sausage
- 1 medium onion diced
- 1 bell pepper any color, diced
- 2 stalks celery diced
- 2 cloves garlic minced
- 1 cup uncooked long grain white rice
- 2 ½ cups chicken broth
- 1 Tablespoon Cajun seasoning adjust to taste
- 2 green onions sliced
- 2 Tablespoons fresh parsley chopped
Instructions
- In a large skillet, cook sausage over medium heat until browned. Drain off any excess grease.
- Add onion, bell pepper, and celery; cook until softened, about 5 minutes. Stir in garlic and cook 1 more minute.
- Stir in rice and Cajun seasoning until rice is coated.
- Pour in chicken broth, bring to a boil, then reduce heat to low. Cover and simmer 20 minutes, or until rice is tender and liquid is absorbed.
- Remove from heat. Fluff rice with a fork, then stir in green onions and parsley. Serve warm.

- Use spicy sausage for more heat, or keep it mild for the kids.
