Low Carb Crustless Quiche with Bacon, Broccoli and Cheddar

Ingredients
- 4 slices regular bacon chopped
- 6 large eggs beaten
- 1 cup half and half (or whole milk)
- 1 cup shredded cheddar cheese
- ¾ cup cooked broccoli chopped
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Preheat oven to 375 degrees.
- In a cast iron skillet or other oven-safe skillet, cook 4 slices regular bacon until crispy.Remove pan from heat. With a slotted spoon, remove cooked bacon to drain on a paper towel. Remove grease from the pan and discard or save for another use.
- In a large bowl, whisk 6 large eggs and 1 cup half and half.Add bacon, ¾ cup cooked broccoli, and 1 cup shredded cheddar cheese. Stir to combine. Season with ¼ teaspoon salt and ¼ teaspoon black pepper.
- Add egg mixture to the skillet.
- Cook in the oven for 45 minutes or until eggs in the center are set.If it appears to be browning too quickly, cover with foil.
- Allow to cool slightly before cutting into wedges to serve.
