Ingredients

  • 4 slices regular bacon chopped
  • 6 large eggs beaten
  • 1 cup half and half (or whole milk)
  • 1 cup shredded cheddar cheese
  • ¾ cup cooked broccoli chopped
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  • Preheat oven to 375 degrees.
  • In a cast iron skillet or other oven-safe skillet, cook 4 slices regular bacon until crispy.
    Remove pan from heat. With a slotted spoon, remove cooked bacon to drain on a paper towel. Remove grease from the pan and discard or save for another use.
  • In a large bowl, whisk 6 large eggs and 1 cup half and half.
    Add bacon, ¾ cup cooked broccoli, and 1 cup shredded cheddar cheese. Stir to combine. Season with ¼ teaspoon salt and ¼ teaspoon black pepper.
  • Add egg mixture to the skillet.
  • Cook in the oven for 45 minutes or until eggs in the center are set.
    If it appears to be browning too quickly, cover with foil.
  • Allow to cool slightly before cutting into wedges to serve.

To make as a freezer meal

    Notes

    To Make as a Freezer Meal:
    Cook bacon and drain. Allow to cool.
    In a large bowl, combine eggs and half and half.
    Add bacon, broccoli, and shredded cheddar cheese. Stir to combine.
    Place the quiche mixture in a gallon-sized freezer bag. Seal tightly (you may want to double bag). Be sure to label.
    Place flat in the freezer until ready to thaw and cook.
    To Cook from a Freezer Meal:
    Thaw in the refrigerator 12–24 hours.
    Preheat oven to 375 degrees. Add thawed egg mixture to an oven-safe skillet and cook for 45 minutes or until eggs in the center are set.
