🛒 Ingredients
Here's what you'll need to grab from your pantry or grocery store.
- cashew butter - I've used Trader Joe's cashew butter and also a nut butter mix from Costco. Check your label - if yours is lightly sweetened with cane sugar, it's worth considering lightening the amount of maple syrup in this recipe.
- pure maple syrup - For sweetness and for flavor
- vanilla extract
- collagen powder - This is the protein powder element. I use Vital Proteins brand.
- almond flour - Simply put, this is almonds that are finely ground. It adds a nutty flavor and keeps these protein bites gluten free. Plus, the almonds give some extra protein to the recipe.
- coconut flour - I used coconut flour because it absorbs a lot of moisture. If you need to use the extra, try making these keto meatloaf muffins. If you really don't want to purchase an extra ingredient, you can omit this and use extra almond flour or collagen powder
- mini chocolate chips

📋 Substitutions
Nut butter - Cashew butter works best in this recipe because it has the most neutral flavor. Almond butter works well but has a stronger, nuttier flavor.
Using a different nut butter will create a different flavor, so the choice is yours!
Coconut flour - If you need to omit the coconut flour you will have to add a little more almond flour or collagen protein powder to get the right consistency.
🥣 How to make cookie dough protein bites
Here's how to make these chocolate chip cookie dough protein bites.
- Step 1: In a large mixing bowl, combine the cashew butter, maple syrup and vanilla. Stir together until smooth.
- Step 2: Add collagen, almond flour, salt and a portion of the coconut flour. Use a whisk to mix ingredients together until it starts to resemble cookie dough.
Continue to work the dough until there are no streaks and everything in well combined.
After mixed, if dough is still a little soft add another ½ tablespoon of coconut flour.
- Step 3: Fold the mini chocolate chips in to the dough and mix together until they are evenly distributed.
- Using a 1-ounce scoop, scoop out portioned scoops of dough. Roll them between your hands until smooth.
Place on a parchment paper lined baking sheet until you've assembled 12 protein balls.
Hint: If dough is too soft after it is mixed, you can chill the dough for about 30 minutes in the fridge to make it more firm. This will help to roll uniform balls.
Storage
These protein bites can be stored in an airtight container in the fridge for up to 3 weeks. They will be safe to eat for longer, but quality may decrease the longer they are stored.
Storing in the fridge helps maintain the best texture.

Tips
Coconut flour: If you don't have coconut flour, you can omit this and use extra almond flour or collagen powder until you reach the desired consistency. You'll need more than the ½ to 1 Tablespoon called for to substitute it. Mixing: The collagen powder is a little hard to mix in but it is important to get it fully incorporated in to the dough. Consider it a calorie burner! Consistency: Due to variations in different brands of ingredients you may end up with a dough that is too dry or too wet. Simply add a little more cashew butter to combat a dry dough, or a little more coconut flour or collagen to combat one that is to loose.Storage
