Every mom I grew up with had a scotcheroo bars recipe hanging out in their recipe file. This decadent dessert is a delicious marriage of peanut butter rice krispie treat, topped with a blend of melted chocolate and butterscotch chips.

How to Make Scotcharoo Bars
The beauty of this bar recipe is that you can make these with minimal cook time.
Basically, melt the corn syrup and sugar together until the sugar dissolves.
Then, add peanut butter and Rice Krispies to the sugar mixture.
Spread into a well greased 9 x 13 pan, pressing gently into corners.
Tip: Don't press the peanut butter cereal mixture in too hard. To keep these scotcharoos soft and chewy you'll need a gentle hand.
To Make the Topping
This is where the butterscotch flavor comes in! Combine the chocolate chips and butterscotch chips. Microwave in 30 second increments, stirring occasionally, until chips are melted and smooth.
Spread over scotcheroo bars evenly.
Scotcheroo Bars Tips and Variations
- Don't over boil the sugar and corn syrup. Just heat it to the point of the ingredients combining.
- Swap out the rice krispies for Special K bars.
- I make these peanut butter rice crispy treats with karo syrup, but of course you can use a different brand! Both light and dark will work.
- To spread the treats in your 9x13 pan, you can place plastic wrap sprayed with cooking spray on top and spread that way.
As another alternative, you can slightly wet your hands to keep from sticking to the mixture. - For easy removal, line the pan with parchment paper.
- These taste best served within 1-2 days. That is, if you can keep them around that long!

Easy Soft Scotcharoo Bars
Ingredients
To make the Scotcheroo Bars
- 1 cup sugar
- 1 cup light corn syrup Karo
- 1 cup creamy peanut butter
- 6 cups rice cereal like Rice Krispies
To make the Chocolate Chip and Butterscotch Topping
- 1 cup semi-sweet chocolate chips
- 1 cup butterscotch chips
Instructions
To make the Scotcheroo Bars
- In a large saucepan, bring sugar and corn syrup just to a boil. The sugar will melt into the corn syrup. Remove from heat and while still warm, add peanut butter. Stir to incorporate.
- Add Rice Krispies and stir to combine.
- Put mixture into a well-greased 9 x 13 pan. Use clean hands or a spatula to spread mix evenly throughout the pan.
To make the Chocolate Chip and Butterscotch Topping
- In a small/cereal sized bowl, combine the chocolate chips and butterscotch chips. Microwave in 30 second increments, stirring occasionally, until chips are melted and smooth.
- Spread over scotcheroo bars evenly.
- Allow topping to set before cutting into squares and serving.
