- fresh zucchini
- egg
- panko crumbs - these are lighter and fluffier than a traditional bread crumb. I really like the texture of them for this recipe
- parmesan cheese
- sea salt and ground black pepper
How to Make Air Fryer Zucchini Fries
Always make sure you preheat your air fryer!
Mix the dry ingredients. Grab a shallow dish with a lip or a large bottomed bowl. Place panko breadcrumbs, parmesan cheese, sea salt and black pepper and set aside.
Add the beaten egg to a second shallow bowl. The egg is what we're using to hold the panko mixture to the zucchini.
Working with 1 piece at a time, evenly dip the zucchini in the egg mixture. Next up, place half of the zucchini into the dry ingredients and dredge zucchini in the breading mixture by rolling it to coat each slice. Place on a plate when complete to put them in at the same time.
Place half of the fries evenly into the air fryer basket, spreading them in a single layer so they don't overlap. Bake for 7-10 minutes until crispy; shaking the basket a few times.
Repeat with the remaining zucchini fries. Season them with a pinch of salt right when they come out of the air fryer. Then add your dipping sauce for zucchini fries. We love ranch, chipotle mayo, or eating them on their own!

You can substitute the panko for any seasoned breadcrumb mixture. To make these into gluten free zucchini fries you can substitute almond flour for the breadcrumbs.

Ingredients
- 2 medium zucchini quartered and halved
- 1 large egg beaten
- ½ panko breadcrumbs
- ¼ cup parmesan cheese grated
- 1 teaspoon sea salt
- ¼ teaspoon ground black pepper
Instructions
