What if I told you that you could enjoy the taste of a fried appetizer or healthy snack by making it in your Air Fryer? That’s why everyone is going nuts for air fryer recipes! We’ve able to cook up crispy air fryer zucchini fries with less oil, in minimal time…no spattering!

I feel like one of those late night commercials, when they’re like, “But wait, you get TWO AIR FRYERS!”

But the food and recipes like really are fun to play around with and even more delicious to eat!

  • fresh zucchini
  • egg
  • panko crumbs – these are lighter and fluffier than a traditional bread crumb. I really like the texture of them for this recipe
  • parmesan cheese
  • sea salt and ground black pepper

How to Make Air Fryer Zucchini Fries

Always make sure you preheat your air fryer!

Mix the dry ingredients. Grab a shallow dish with a lip or a large bottomed bowl. Place panko breadcrumbs, parmesan cheese, sea salt and black pepper and set aside.

Add the beaten egg to a second shallow bowl. The egg is what we’re using to hold the panko mixture to the zucchini.

Working with 1 piece at a time, evenly dip the zucchini in the egg mixture. Next up, place half of the zucchini into the dry ingredients and dredge zucchini in the breading mixture by rolling it to coat each slice. Place on a plate when complete to put them in at the same time.

Place half of the fries evenly into the air fryer basket, spreading them in a single layer so they don’t overlap. Bake for 7-10 minutes until crispy; shaking the basket a few times.

Repeat with the remaining zucchini fries. Season them with a pinch of salt right when they come out of the air fryer

Serve with ranch, chipotle mayo, or on their own!

What can I substitute for panko breadcrumbs?

You can substitute the panko for any seasoned breadcrumb mixture. To make these into gluten free zucchini fries you can substitute almond flour for the breadcrumbs.

What do I serve zucchini sticks with?

Zucchini sticks can be a snack or light meal on their own. They are great served with a dip like marinara or ranch dressing. You can also use these as your side dish for dinner recipes.

Air Fryer Zucchini Fries are a fun way to add vegetables to your diet and would be a hit with kids! They have a crispy outside and soft center making them a great low carb substitute for French fries.

Total Time 15 minutes

Ingredients

  • 2 medium zucchini, quartered and halved
  • 1 large egg, beaten
  • ½ panko breadcrumbs
  • ¼ cup parmesan cheese, grated
  • 1 teaspoon sea salt
  • ¼ teaspoon ground black pepper

Instructions

  1. Preheat air fryer to 400 degrees and prep your zucchini fries.
  2. In a small bowl, blend panko breadcrumbs, parmesan cheese, sea salt and black pepper and set aside.
  3. Add the beaten egg to a shallow dish. We’ll use this as the "glue" when we're coating the zucchini.
  4. Working with 1 piece at a time, evenly dip the zucchini in the egg mixture. Next up, place half of the zucchini into the dry ingredients and dredge zucchini in the breading mixture by rolling it to coat each slice. Place on a plate when complete to put them in at the same time.
