- 2 medium zucchini quartered and halved
- 1 large egg beaten
- ½ panko breadcrumbs
- ¼ cup parmesan cheese grated
- 1 teaspoon sea salt
- ¼ teaspoon ground black pepper
Preheat air fryer to 400 degrees and prep your zucchini fries.
In a small bowl, blend panko breadcrumbs, parmesan cheese, sea salt and black pepper and set aside.
Add the beaten egg to a shallow dish. We’ll use this as the "glue" when we're coating the zucchini.
Working with 1 piece at a time, evenly dip the zucchini in the egg mixture. Next up, place half of the zucchini into the dry ingredients and dredge zucchini in the breading mixture by rolling it to coat each slice. Place on a plate when complete to put them in at the same time.
Place half of the fries evenly into the air fryer basket, spreading them in a single layer so they don't overlap. Bake for 7-10 minutes until crispy; shaking the basket a few times.
Repeat with the remaining zucchini fries. Season them with a pinch of salt right when they come out of the air fryer
Serve with ranch, chipotle mayo, or on their own!
