Roasted asparagus is a family favorite at our house. We love serving this asparagus alongside burgers, grilled chicken, or as a green side alongside mashed potatoes, too!
Easy Roasted Asparagus
We have asparagus that somehow popped up in our landscaping, and we decided to let it stay! Asparagus cooks up super quick and is a light and healthy side.

Asparagus contains a component called saponins which are believed to have anti-inflammatory and anti-cancer properties. They are also believed to aide in maintaining blood pressure and blood sugar levels.
Sounds healthy to me, right???
Asparagus is also high in vitamin K and several of the B vitamins. It contains vitamin C, vitamin A, folate, manganese and potassium. All in all, if you want to choose a vegetable that is nutritious as well as delicious, you can’t go wrong choosing asparagus.
It seems that old school recipes used to douse asparagus in hollandaise sauce and cream sauce.
But the truth is, asparagus doesn't need a lot of doctoring to make it tasty!
How to choose and prep asparagus
Growing your own asparagus can ensure you can pick it at the right time to enjoy its goodness. But it you don't have random asparagus popping up along your boxwoods, I can help. 😉
When you're buying asparagus, look for spears that are young and tender.
Thicker asparagus will have to be peeled because the stem can be stringy and tough. If all that's available at the store is thick asparagus, cut off the thickest bottom parts before cooking.
Wash the vegetable and then cook it whole.
Ways to Use Roasted Asparagus with Parmesan
Of course, I love serving Oven Roasted Parmesan Asparagus as a side dish. I've also been known to grab it before dinner is ready and eat it as a snack!
Another way to use it: Add roasted asparagus to your favorite pasta.
Have leftovers?
If you have leftover asparagus, don’t throw it away! Chop it up and add to the next morning’s omelet. Not only will this use the asparagus, it will add an extra surprise to breakfast.
How about grilling asparagus?
If it's summertime, you can make this same recipe on the grill. Carefully lay the asparagus spears on the grill perpindicual to the grill grates - otherwise they'll fall through!
Add the shredded parmesan right after you pull the asparagus from the grill.

Roasted Parmesan Asparagus
Ingredients
- 2 bunches asparagus, washed and trimmed on end
- 1 Tbsp. olive oil
- Salt & pepper
- ¼ cup shredded parmesan cheese
Instructions
- Preheat the oven to 450 degrees.
- On a sheet pan with sides, toss the asparagus with the oil, then season with salt and pepper. Spread in the pan.
- Cook until the asparagus is just cooked through and tender, about 12-15 minutes. Sprinkle immediately with parmesan cheese.
- Serve warm or at room temperature
