Chocolate Chip Cookie Dough Protein Balls

These chocolate chip cookie dough protein bites are the perfect healthy snack or treat. They are perfectly portable, packed with collagen protein and taste just like cookie dough!

Ingredients

  • 1 cup cashew butter
  • ½ cup pure maple syrup
  • 1 teaspoon pure vanilla extract
  • ½ cup collagen protein powder
  • ¼ cup blanched almond flour
  • ½ to 1 Tablespoon coconut flour
  • ¼ teaspoon salt
  • ¼ cup mini chocolate chips

Instructions

  • In a large mixing bowl, combine 1 cup cashew butter, ½ cup pure maple syrup and 1 teaspoon pure vanilla extract. Stir together until smooth.
  • Add ½ cup collagen protein powder, ¼ cup blanched almond flour, ½ to 1 Tablespoon coconut flour (start with ½ Tablespoon and add more as needed) and ¼ teaspoon salt to the bowl. Use a rubber spatula to mix ingredients together until it starts to resemble cookie dough.
    Continue to work the dough until there are no streaks and everything in well combined. After mixed, if dough is still a little soft add another ½ tablespoon of coconut flour.
  • Fold ¼ cup mini chocolate chips into the dough and mix together until they are evenly distributed. 
  • Using a 1-ounce scoop, scoop out portioned scoops of dough. Roll them between your hands until smooth.
    Place on a parchment paper lined baking sheet until you've assembled 12 protein balls.

Notes

Tips

Coconut flour: If you don't have coconut flour, you can omit this and use extra almond flour or collagen powder until you reach the desired consistency. You'll need more than the ½ to 1 Tablespoon called for to substitute it.
Mixing: The collagen powder is a little hard to mix in but it is important to get it fully incorporated in to the dough. Consider it a calorie burner!
Consistency: Due to variations in different brands of ingredients you may end up with a dough that is too dry or too wet. Simply add a little more cashew butter to combat a dry dough, or a little more coconut flour or collagen to combat one that is to loose. 

Storage

Store the protein bites in an airtight container in the fridge for up to 3 weeks.
To freeze: Place in a sealed freezer bag and store in the freezer for up to 2 months. Allow to thaw at room temperature for 10-15 minutes before enjoying. Do not microwave.
