Blueberry Mint Lemonade Mocktail | Perfect Summer Sippin’

Coming in at under 100 calories, blueberry mint lemonade is a deliciously refreshing mocktail. Fresh blueberries and lemon along with a gorgeous purple hue make this sipper a pure delight!

This is no ordinary blueberry mint water. Most definitely not.

This is a what I like to call a blueberry mint lemonade mocktail. Or a blueberry mint mojito.

Whatever you want to call it, if you’re looking for a non-alcoholic drink then this is for you.

Do you know those blueberries hanging out in your produce drawer? You know the ones, they were for blueberry lemon cake, or mini blueberry muffins. Or maybe, you have frozen blueberries and

Now, it’s time to give those blueberries a home.

We’re gonna turn those blueberries into a fabulous blueberry mint lemonade.

Ingredients in Blueberry Mint Lemonade

  • Blueberries – use fresh when in season and frozen when out of season
  • Fresh mint leaves – yep, you need the real deal here!
  • Real Maple Syrup – same thing here – real maple syrup. Trust me, when it meets the mint, you’ll be happy you did.
  • Honey
  • Fresh Lemon Juice
  • Club Soda
  • Ice cubes

How to Make Blueberry Mint Lemonade

This mint lemonade recipe uses a blueberry maple simple syrup instead of a plain old sugar water type.

If you’re making a special drink, it’s got to be a little out of the ordinary, don’t you think??

Step 1: Combine the blueberries, mint, maple syrup, honey, and one quarter cup water in a small saucepan set over medium heat.

Simmer until the mixture is heated through and starts to thicken, approximately 4-5 minutes.

Gently press the blueberries with a wooden spoon to release juices.

Remove from heat and pour through a fine mesh strainer to separate the solids.

Reserve remaining liquid syrup and set aside to cool.

Step 2: Add a half cup fresh lemon juice and remaining water to a large pitcher. Add blueberry maple simple syrup, to taste, and stir to combine.

Step 3: We’re just about there! Fill 4 glasses with ice and fill each 2/3 full with the blueberry lemonade mixture.

Top off each glass with some club soda and garnish with sprigs of fresh mint, blueberries, and/or lemon wedges, if desired – and I think they are.

Ingredients

  • 1 cup club soda

Mint sprigs, 
Fresh blueberries
, Lemon wedges

Instructions

  1. To prepare the blueberry maple simple syrup, combine the blueberries, mint, maple syrup, honey, and one quarter cup water in a small saucepan set over medium heat.
  2. Simmer until the mixture is heated through and starts to thicken, approximately 4-5 minutes. As the mixture simmers, gently press the blueberries with a wooden spoon to release juices while stirring to combine with the other ingredients.

  4. Add lemon juice and remaining water to a large pitcher. Add blueberry maple simple syrup, to taste, and stir to combine.

Notes

Just a hint of real maple syrup is used in the simple syrup for this recipe. This adds a hint of rich maple goodness, without overpowering the other flavors.

I love this! I want to make this for a baby shower I’m throwing. I’m thinking of quadrupling or even quintupling the recipe and putting it in beverage dispenser. I know I should add the club soda at the very last second, but besides do you know if the recipe doubles, triples, etc. well or should I modify the amount of any of the ingredients when making a large batch? Any tips are greatly appreciated!

Hi Kristen, that sounds perfect for a baby shower! I've doubled but not tripled it. You might be able to cut back on the simple syrup mixture you make. If it were me I'd just x4 or x5 it as is. Some frozen blueberries would help keep guests drinks cool, you could always have those as an additional garnish. Enjoy the baby shower, sounds fun!!! :)
