What Is Freezer Jam?
Freezer jam is a quick, no-cook jam made by combining fresh fruit, sugar, and pectin, then storing it in the freezer instead of canning it. This recipe has a special place in my heart! My Grandma Rood used to make freezer jam and store it in old peanut butter jars.

- has a brighter, fresher flavor
- is stored in the freezer instead of pantry shelves

🛒 Ingredients

- fresh strawberries
- granulated sugar
- fruit pectin (such as Sure-Jell or Ball freezer pectin)
- water

🥣 How to Make Strawberry Freezer Jam

- Step 1: Prepare the strawberries. Wash and hull. Crush the strawberries using a potato masher or fork. You want a slightly chunky texture.

- Step 2: Measure the sugar. Measure the sugar according to your pectin package instructions and add to crushed strawberries.

- Step 3: Combine pectin and water. In a small saucepan, bring the pectin and water to a boil, stirring constantly.

- Step 4: Mix everything together. Pour the hot pectin mixture into the strawberries and sugar. Stir well for several minutes until the sugar dissolves.

- Step 5: Fill containers. Pour the jam into freezer-safe containers, leaving about ½ inch of space at the top.

Step 6. Let it set. Let the jam sit at room temperature for about 24 hours to set.
Transfer to the freezer for long-term storage.

Low Sugar Strawberry Freezer Jam (My Go-To Version)
If you prefer a less sweet jam, you can absolutely make low sugar strawberry freezer jam. This is actually the version I make most often!
The key is using a low or no-sugar pectin, which is designed to set with less sugar.

- 2 cups crushed strawberries
- 1 to 1½ cups sugar
- 1 package low sugar pectin
- water
How to Make It
- Crush strawberries
- Measure sugar
- Cook pectin
- Combine
- Fill containers
- Freeze
Important Tips for Low Sugar Jam
Use the right pectin - Regular pectin won’t set properly with less sugar. Be sure to use a low or no-sugar version.
Expect a softer set - Low sugar jam is usually a little looser than traditional freezer jam but still spreads beautifully and tastes just as good
Flavor is more strawberry-forward - With less sugar, the strawberry flavor really shines.
Tips for the Best Freezer Jam
- Don’t skip the sugar ratio. Freezer jam relies on sugar to set properly.
- Leave headspace. Jam expands as it freezes, so don’t fill containers to the top.
- Use ripe strawberries. The better the berries, the better the jam. 🍓
Storage
Store in the refrigerator up to 3 weeks or the freezer up to 1 year.

Strawberry Freezer Jam

Ingredients
- 2 cups crushed strawberries about 1 quart whole berries
- 4 cups granulated sugar
- 1 box powdered fruit pectin 1.75 oz
- ¾ cup water
Instructions
- Prep berries: Wash, hull, and crush strawberries using a potato masher. Do not puree because small chunks help texture.
- Add sugar: Stir 4 cups granulated sugar into 2 cups crushed strawberries. Let sit 10 minutes, stirring occasionally. (This draws out juice and dissolves sugar.)
- Cook: In a small saucepan, combine 1 box powdered fruit pectin and ¾ cup water. Bring to a boil. Boil for 1 minute while stirring constantly. Remove from heat immediately.
- Combine: Pour hot pectin mixture into strawberries. Stir constantly for 3 minutes. Mixture will still look loose and that’s normal.
- Fill containers: Pour into jars or freezer containers, leaving ½ inch space at top.
- Let stand at room temp 24 hours until set.Freeze until ready to use.
