Easy Sloppy Joe Sliders made with ground beef, Hawaiian rolls, and melted cheddar — baked to golden perfection for game day, harvest meals, or busy weeknights.

There are some meals that just take you straight back to childhood — and Sloppy Joes are one of them. But instead of piling the saucy mixture onto hamburger buns like we did growing up, these Sloppy Joe Sliders tuck all that nostalgia between soft Hawaiian rolls and melted cheddar, then bake up hot, cheesy, and golden.
Think of them as the fun, finger-food version of my Homemade Sloppy Joes — perfect for game day, busy weeknights, harvest season, or feeding a hungry crowd.
These baked sliders come together with simple ingredients you probably already have in your kitchen — ground beef, tomato sauce, ketchup, and a little brown sugar — for that perfect balance of tangy, sweet, and savory. Trust me, one batch won’t last long!

- Brown sugar: Balances acidity and adds richness.

- Step 3: Make the sloppy joe sauce. Stir in tomato sauce, ketchup, tomato paste, Worcestershire sauce, vinegar, brown sugar, and mustard. Simmer uncovered 5–8 minutes until thickened. Taste and adjust seasoning.

- Step 4: Assemble the sliders. Slice the rolls in half horizontally, keeping the tops and bottoms intact. Place the bottom half in a greased 9×13-inch baking dish.
Spread the meat mixture evenly over the rolls, sprinkle with cheese, then place the top half of the rolls over the filling.

- Step 5: Top & bake. Brush melted butter over the tops and sprinkle with sesame seeds if desired. Cover loosely with foil and bake for 15 minutes. Remove foil and bake an additional 5 minutes, until the tops are golden and the cheese is melted.

- Step 6: Serve. Let sliders cool 5 minutes before cutting and serving.
📋 Variations
