This Mini Freezer Session takes about 60 minutes and fills your freezer with backup for the moments that always sneak up on us: rushed mornings, lunches you forgot to pack, kids who are "STARRRRVING" the second they hit the door, and that 5 o'clock realization that you have no idea what's for dinner.
What We're Making
In about an hour, we're filling the freezer with:
- 12 Make-Ahead Breakfast Burritos
- 24 Mini Blueberry Muffins
- 12 Homemade Uncrustables
- 2 family-size portions of Taco Meat
We're not making 27 casseroles or spending all day in the kitchen. Just four things your family will actually eat, so the busiest week of the school year gets a little easier.

Okay. Clear some freezer space and let's do this.
1. Make-Ahead Breakfast Burritos
These are for the mornings when everyone needs to be three places at once and sitting down for breakfast just isn't gonna happen.
We're making 12 burritos loaded with sausage, eggs, salsa and cheese. Once they're frozen, pull them out one at a time and reheat as needed. No thinking required.

Freezer tip: Let the filling cool a little before rolling so you're not trapping steam inside the tortilla.

2. Mini Blueberry Muffins
I love tucking these into the freezer because one muffin solves about six problems.
Breakfast? Yep. Lunchbox needs something extra? Throw one in. Someone's "STARRRRVING" the second they walk in from school? Muffin.
This recipe makes 24 mini muffins, and we're baking them first so they can cool while we work on everything else.

Freezer tip: Let the muffins cool completely before bagging them. Skip this step and you'll open the bag to ice crystals instead of muffins.

3. Homemade Uncrustables
This is basically doing tomorrow's lunch-packing today, while today-you is already in the kitchen.
We're making 12 homemade PB&J Uncrustables and freezing them so they're ready the second you need one.
Freezer tip: Flash freeze the sandwiches on a parchment-lined sheet pan first. Once they're firm, transfer them to a freezer bag or container.

4. Freezer Taco Meat
Is a bag of browned ground beef the most glamorous thing you'll ever put in your freezer? No.
Will you feel like a genius at 5:17 on a Wednesday when you haven't thought about dinner? Absolutely.
We're cooking 2 pounds of taco meat and dividing it into two family-size portions.
I use my Homemade Taco Seasoning here. Use 1 to 2 tablespoons plus a quarter cup of water for every pound of meat, simmered until the liquid's mostly gone. If you don't have a batch in the pantry, make one ahead of your freezer session, or use a store-bought packet and follow the ratio on the back.

Freezer tip: Let the meat cool, divide it between two freezer bags and flatten before freezing. Flat bags take up less space and thaw faster.

And don't get hung up on the word "taco." One bag can become:
- Tacos
- Quesadillas
- Nachos
- Taco salad
- Walking tacos
- Burrito bowls
- Loaded baked potatoes
That's the beauty of freezing the meat instead of committing it to one dinner. Use what you have, decide later. Around here, that's basically a life philosophy.

How to Make Everything in 60 Minutes
Work Smarter
Here's the part that turns this into an actual freezer session instead of four recipes you happen to make on the same day: we overlap the jobs.
Don't make Recipe #1, clean up, then start Recipe #2. Keep moving.
0:00 - Start the muffins. Preheat the oven to 375°F. Mix the batter, fill your mini muffin pan and get it in the oven.
0:10 - Get the meat going. While the muffins bake, brown the 2 pounds of ground beef in one skillet and cook the breakfast sausage in another. Season the taco meat and set it aside to cool.
0:25 - Muffins out, eggs in. Pull the muffins and let them start cooling. Scramble the eggs for the burritos, combine the filling and let it cool slightly.
0:35 - Make the Uncrustables. Assemble your 12 PB&J sandwiches and set them on a parchment-lined sheet pan for flash freezing.
0:45 - Roll the burritos. Divide the filling among the tortillas, add the cheese and roll up all 12. Onto a sheet pan for flash freezing, too.
0:55 - Package and label. Divide the cooled taco meat into two freezer bags, flatten and label. If the muffins are completely cool, bag those too. Still warm? Leave them on the rack and bag them later.
Done. The burritos and Uncrustables need some passive freezer time before they go into long-term storage, but your hands-on work is finished.
