I love putting together food spread for get togethers, especially ones as fun to make as make ahead, easy brunch menus.
It's important in our family that we keep things simple and somewhat healthy and a make ahead brunch idea was perfect. You know - toddlers and teenagers can occupy a lot of time. In the best possible way, of course.
But holidays alone can be a little overwhelming, and when the little kids are expecting the Easter bunny we've got to get hopping. <---- See what I did there???
We made it through Mass with my only breaking a slight sweat and had time to grab a quick photo of the kids.
What makes this an easy brunch menu is that a lot the dishes can be made ahead of time. I also don't feel one bit guilty about taking some help where I can get it!
Here’s what we served up for Easter Brunch at our household.
Easy Brunch Menu
Honey Baked Ham - purchased from the store and heated in the slow cooker
Mixed Greens Salad with Broken Raspberry Vinaigrette, Pecans & Tomatoes
Instant Pot Mashed Sweet Potatoes
made ahead of time and reheated for 10-15 minutes
Mac and Cheese
cooked in my Instant Pot
Orange Fluff Jello with Mandarin Oranges
my awesome mother-in-law made it for our daughter because she knows it’s her favorite!
Slow Cooker French Toast Casserole
can be baked or made in the slow cooker
Crustless Sausage Quiche
prebaked and reheated
Almost as easy - Baked Frittata Recipe
Mixed Berries
strawberries, blueberries, raspberries and blackberries
Dessert
Mom's Apple Slab Pie
I like to have the food ready to go when we get home from church with minimal effort. Most menu ideas were already made and simply needed to be reheated.
I'd rather hang out with our guests and get on the floor and play with kiddos than slave away in the kitchen, wouldn't you?
