Totchos (Loaded Tater Tot Nachos Recipe)

- 32 ounces bag frozen tater tots
- 1 pound ground beef
- 1 small yellow onion diced
- 1.25 ounces taco seasoning or homemade taco seasoning
- ¼ cup water
- 15 ounces nacho cheese sauce
- 4 ounces pepper jack cheese shredded
- 1 Roma tomato diced
- 4 ounces sliced black olives drained
- ¼ cup sour cream
- ¼ cup salsa
- 2-3 jalapeno slices optional
Preheat the Oven: Preheat oven to 425°F. Line a large sheet pan with parchment paper if desired for easier cleanup.
Bake the Tater Tots: Spread 32 ounces bag frozen tater tots in a single layer on the prepared sheet pan. Bake according to package directions until golden brown and crispy.
Heat the cheese sauce: While the tots are cooking, heat 15 ounces nacho cheese sauce in the microwave or in a small saucepan. Set aside.
Cook the Ground Beef: While the tots are baking, cook 1 pound ground beef and 1 small yellow onion in a skillet over medium heat until fully browned. Drain excess grease if needed. Add seasoning: Stir in 1.25 ounces taco seasoning or homemade taco seasoning and ¼ cup water. Simmer until thickened.
Assemble the Totchos: Once the tots are crispy, remove the pan from the oven. Evenly spoon the seasoned taco meat over the tots.Pour the nachos cheese over the top and sprinkle 4 ounces pepper jack cheese over the top. Melt the Cheese: Return the pan to the oven for 3–5 minutes, or until the cheese is fully melted.
Add Toppings & Serve: Top with ¼ cup sour cream, ¼ cup salsa, 4 ounces sliced black olives, diced 1 Roma tomato, 2-3 jalapeno slices and any additional desired toppings.Serve immediately while hot and crispy.
Crispy Tots Matter! Bake the tater tots until deeply golden and crispy before adding toppings. This prevents soggy totchos and gives you the best texture.
Use a Large Sheet Pan. Crowding the pan can cause the tots to steam instead of crisp. Use a large baking sheet and spread them in a single layer.
Cheese Tip: Freshly shredded cheese melts more smoothly than pre-shredded cheese, but either will work.
Swap the Protein: This recipe works great with shredded chicken, pulled pork, or leftover taco meat instead of ground beef.
