Smore Rice Krispie Treats

Ingredients

  • 6 Tablespoons unsalted butter
  • 10 cups mini marshmallows
  • 4 cups crispy rice cereal Rice Krispies
  • 2 cups Golden Grahams cereal
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • 3 ounces Hershey’s chocolate bars (2 full size bars)
  • nonstick cooking spray to prevent hands from sticking to treats

Instructions

  • Line a 9x9 pan with parchment paper.
  • Heat a large pot on medium low heat. Melt butter, then add 8 cups of marshmallows. Stir frequently until marshmallows have melted, about 5 minutes.
  • Remove from heat, then stir in salt and vanilla. Stir in cereals and remaining 2 cups of marshmallows.
  • Working quickly, add half of the mixture to the prepared pan. Press lightly, with hands lightly sprayed with cooking spray. Fill corners of pan and make an even layer.  Place 9-12 chocolate bar pieces on top of cereal layer.
  • Add remaining cereal mixture, pressing lightly to make an even layer.  Top with another 9- 12 chocolate pieces, a few marshmallows, and a few golden graham cereal squares.
  • Allow to set for at least an hour before cutting.

Notes

  • Smore Rice Krispies can be stored at room temperature in an airtight container for up to 4 days.
  • Microwave treats for 10-15 seconds to melt chocolate and return to a “gooier” texture.
  • Treats can be frozen for up to 2 months, by wrapping tightly in a double layer of plastic wrap.  To thaw, allow to set at room temperature 1-2 hours, then microwave for 10-15 seconds.
  • If using salted butter, omit the salt addition.
  • For less mess, us a piece of parchment paper lightly sprayed with oil to press cereal mixture into pan.
  • Be careful to not press cereal mixture too much, this will create a denser texture
