Ingredients

  • 3 pound beef chuck roast
  • 1 onion chopped
  • 2 teaspoons minced garlic
  • 10 ounce can diced tomatoes with green chilis
  • 4 ounce mild diced green chilis
  • 1 Tablespoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon oregano
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ cup beef broth
  • Lime wedges for serving
  • Optional: toppings for tacos

Instructions

  • Add 3 pound beef chuck roast, 1 onion, 2 teaspoons minced garlic 10 ounce can diced tomatoes with green chilis, 4 ounce mild diced green chilis, 1 Tablespoon cumin, 1 teaspoon chili powder, 1 teaspoon oregano, 1 teaspoon smoked paprika, 1 teaspoon salt, and ½ cup beef brothto your slow cooker.
  • Cook on high for 1 hour, then low for 7–8 hours, or until tender.
  • Shred beef, return to juices, and serve with lime wedges and your favorite toppings.

Notes

Freezer meal option: This recipe can be assembled as a freezer meal. Add all ingredients to a freezer-safe bag or container and freeze. When ready to cook, thaw overnight in the refrigerator and dump into the slow cooker.
Stretch the meal: Turn leftovers into burrito bowls by serving smaller portions of the shredded beef over rice with beans, corn, lettuce, and toppings. This is an easy way to make the meal go further.
Green chiles: Canned green chiles are typically mild and add flavor rather than heat. They can be omitted for picky eaters or very mild preferences.
Slow cooker variations: Slow cookers can vary in temperature depending on size, age, and brand. Use the cook time as a guideline and rely on what you know about your slow cooker. The beef is ready when it shreds easily with a fork.
Instant Pot tip: If using your Instant Pot, it has a slow cooker function! You can brown the beef on both sides using the Sauté setting, then switch to the Slow Cook function to finish cooking in the same pot.
