Cook the veggies: In a large skillet, heat 1 Tablespoon extra virgin olive oil over medium heat. Add ½ cup white onion, 1 teaspoon minced garlic, and ½ cup chopped celery (or equivalent of green pepper. Season with a little salt and pepper. Cook for 4–5 minutes until softened.
Brown the meat: Add 1 ½ lbs. ground beef to the skillet. Break it apart with a spoon and cook until fully browned, about 5–6 minutes. Drain excess grease.
Make the sauce: Stir in 1 15 ounces tomato sauce, 1 Tablespoon tomato paste, 2 Tablespoons Worcestershire sauce, 1-2 Tablespoons brown sugar, and 1 Tablespoon yellow mustard. Reduce heat to low and simmer uncovered for 5–8 minutes, until thickened.
