Low Carb Bacon Broccoli Breakfast Casserole

This low carb bacon broccoli breakfast casserole is an easy make-ahead breakfast made with eggs, crispy bacon, broccoli, and cheddar cheese. It’s perfect for meal prep and reheats beautifully all week.

Ingredients

  • non-stick cooking spray
  • 3 cups broccoli florets
  • 6 slices bacon cooked and crumbled
  • 1 cup shredded cheddar cheese or Colby Jack
  • 6 large eggs
  • ½ cup heavy cream
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon dried oregano
  • ¼ teaspoon dried thyme
  • salt and black pepper to taste

Instructions

  • Preheat oven: Preheat oven to 350°F and lightly grease an 8×8 baking dish with non-stick spray.
  • Steam 3 cups broccoli florets until just tender. Chop into bite-sized pieces if needed.
    Shortcut: Use steam-in-bag broccoli or leftover cooked broccoli.
  • Assemble the casserole: Transfer the broccoli mixture to the prepared baking dish. Top with 1 cup shredded cheddar cheese and 6 slices bacon (crumbled).
  • Prepare the egg mixture: In a medium bowl, whisk together 6 large eggs, ½ cup heavy cream, ½ teaspoon onion powder, ½ teaspoon garlic powder, ½ teaspoon dried oregano, ¼ teaspoon dried thyme, salt and black pepper.
  • Pour and bake: Pour the egg mixture evenly over the casserole. Bake for 20–25 minutes, or until the center is set.
  • Cool and serve: Let cool for 10 minutes before slicing. Garnish with parsley if desired and serve.

Make Ahead: Bake ahead and store in the refrigerator for up to 4 days. Reheat individual slices in the microwave for 30–40 seconds.
Freezer Instructions: Allow casserole to cool completely, then slice and store in freezer-safe bags or containers. Freeze up to 3 months.
To Freeze Before Baking: Combine all ingredients and store in a freezer bag. Thaw overnight in the refrigerator, then bake as directed.
