Ingredients

  • 16 Tablespoons unsalted butter (2 sticks)
  • 1 cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • 1 pound powdered sugar

Instructions

  • Combine 16 Tablespoons unsalted butterer and 1 cup creamy peanut butter in microwave-safe bowl; microwave in 30-sec intervals, stirring until smooth.
    Stir in 1 teaspoon vanilla extract.
  • In a large bowl, add 1 pound powdered sugar; pour in peanut butter mixture and stir until creamy.
  • Line an 8×8″ pan with foil/parchment; spread mixture in, smoothing top. Create swirl if desired.
  • Refrigerate for 2 hours or until set. Lift out using the overhang, cut into squares, and serve.

Notes

Stovetop version: For a stovetop version combine the peanut butter and butter in a medium saucepan on the stove over medium low heat and stir until completely melted and combined in Step 1.
Cutting Tips: Using a sharp knife, cut the fudge into 1-inch pieces. Small squares are perfect for this rich fudge; a little goes a long way!
Storage: Store leftovers in an air-tight container at room temperature for up to a week. For longer storage, you can refrigerate the fudge. Make sure it's it's tightly wrapped in plastic wrap to prevent it from drying out or absorbing odors from the refrigerator.
