Easy Hamburger Soup with Mixed Vegetables and Alphabet Pasta
A quick, cozy weeknight soup made with ground beef, tomato sauce, veggies, and fun alphabet pasta

Makes 4 servings
- 1 pound lean ground beef
- 15 ounce can tomato sauce
- 5 cups water
- 12 ounces frozen mixed vegetables
- 1 Tablespoon dry minced onion
- ½ cup alphabet pasta
- Salt & black pepper to taste
In a large pot, brown ground beef until cooked through; drain any excess grease.
Stir in tomato sauce, water, minced onion, salt, and pepper. Bring to a boil.
Add frozen vegetables; simmer 10 minutes.
Stir in alphabet pasta; cook 8–10 minutes longer, until pasta is tender.
Taste and adjust seasoning before serving.

Substitute small pasta shapes if you can’t find alphabet pasta.

For richer flavor, swap 2 cups of the water for beef broth.

Soup thickens as it sits—add a splash of water or broth when reheating.
