Blueberry Mint Lemonade
Fresh blueberries, lemon juice, mint, and sparkling club soda come together in this refreshing blueberry mint lemonade recipe. Perfect for summer parties, cookouts, or an easy homemade mocktail.

Makes 4 servings
- 1 cup fresh or frozen blueberries
- 3 Tablespoons fresh mint lightly crushed
- 3 Tablespoons honey
- 3 cups water divided
- ½ cup fresh lemon juice
- 1 cup club soda
- Ice cubes for serving
Optional Garnishes
- Fresh mint sprigs
- Lemon slices
- Fresh blueberries
In a small saucepan, combine 1 cup fresh or frozen blueberries, 3 Tablespoons fresh mint, 3 Tablespoons honey, and ¼ cup water over medium heat.
Simmer for 4-5 minutes, gently pressing the blueberries with a spoon as they soften and release juices.
Remove from heat and pour through a fine mesh strainer to remove solids. Allow syrup to cool slightly.
In a large pitcher, combine ½ cup fresh lemon juice, remaining cold water, and blueberry syrup. Stir well.
Fill glasses with ice and pour lemonade mixture about ⅔ full.
Top with 1 cup club soda and garnish with Fresh mint sprigs, Fresh blueberries or Lemon slices. Serve immediately.
- Frozen blueberries work beautifully in this recipe.
- Adjust sweetness by adding additional honey if desired.
- For best results, add club soda just before serving to keep the lemonade fizzy.
- The blueberry syrup can be made ahead and refrigerated for up to 3 days.
