Ingredients

  • 1 pound 85% lean ground beef
  • ½ cup Italian breadcrumbs
  • ¼ cup grated Parmesan cheese
  • ¼ cup finely chopped onion
  • 2 teaspoons minced garlic
  • 1 large egg beaten
  • 1 Tablespoon Worcestershire sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried parsley
  • ½ teaspoon smoked paprika
  • Salt and black pepper to taste
  • Cooking spray

For the glaze:

  • ½ cup ketchup
  • 2 Tablespoons brown sugar
  • 1 Tablespoon apple cider vinegar

Instructions

  • Preheat your air fryer to 375°F for 5 minutes.
  • In a large mixing bowl, combine 1 pound 85% lean ground beef, ½ cup Italian breadcrumbs, ¼ cup grated Parmesan cheese, ¼ cup finely chopped onion, 2 teaspoons minced garlic, 1 large egg (beaten), 1 Tablespoon Worcestershire sauce, 1 teaspoon dried oregano, 1 teaspoon dried parsley, ½ teaspoon smoked paprika, Salt and black pepper
    Mix gently until well combined without over mixing.
  • Shape the meat mixture into a loaf shape, about 8 inches long and 4 inches wide.
    Lightly spray the air fryer basket with cooking spray to prevent sticking. Place the meatloaf in the basket of the air fryer.

  • While the meatloaf is cooking, prepare the glaze by mixing together the ½ cup ketchup, 2 Tablespoons brown sugar, 1 Tablespoon apple cider vinegar in a small bowl.

  • After 20 minutes of cooking time, remove the meatloaf from the air fryer and brush the glaze evenly over the top and sides of the meatloaf.
  • Return the meatloaf to the air fryer and continue cooking at 375°F for an additional 5-7 minutes, or until the internal temperature reaches 160°F when measured with a digital meat thermometer.
  • Once cooked, carefully remove the meatloaf from the air fryer with a pancake turner or other flat tool and let it rest for 5 minutes before slicing.

Notes

Remember to let the meatloaf rest for several minutes before slicing.
Storage: Store sliced meatloaf in an airtight container and refrigerate for up to 3 days. To reheat, pop a slice in the microwave or warm it in the air fryer for a few minutes.
Make ahead tip: You can combine the meat and all the ingredients in advance and refrigerate, covered. Pull from the fridge 20-30 minutes before cooking to remove the chill.
