Makes 6 servings
- 2 pounds boneless skinless chicken breasts about 4 breasts
- 1 cup chicken broth
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon dried parsley
- ½ teaspoon black pepper
Place the chicken breasts in the bottom of a 6-quart slow cooker.
Pour the chicken broth over the chicken.
In a small bowl, combine the paprika, garlic powder, parsley, and black pepper. Sprinkle evenly over the chicken.
Cover and cook on LOW for 4-5 hours or HIGH for 2-3 hours, until the chicken reaches an internal temperature of 165°F.
Remove the chicken from the slow cooker and shred using two forks or a hand mixer.
Return the shredded chicken to the slow cooker and stir with some of the cooking liquid to keep it moist before serving.
- Cooking times may vary depending on the size and thickness of the chicken breasts.
- For extra flavor, use homemade chicken broth or chicken stock.
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
- Freeze shredded chicken in freezer-safe bags or containers for up to 3 months.
- Use this chicken for sandwiches, wraps, salads, tacos, casseroles, soups, and meal prep.
Shredding Tip: If using a hand mixer or stand mixer, transfer the chicken to a large bowl before shredding. Avoid shredding directly in the slow cooker with the hot cooking liquid, as it can splatter and create a mess. Return the shredded chicken to the cooking juices afterward for extra moisture.
Most recipes that call for one rotisserie chicken can be made with approximately 4 cups of this shredded chicken.
