Sheet Pan Kielbasa and Veggies

Ingredients

  • pounds yellow potatoes halved if baby potatoes or cut into pieces if regular potatoes
  • 2 cups baby carrots
  • 1 medium onion chopped into 1-inch pieces
  • 16 ounces kielbasa sliced into rounds or half-moons
  • 1 medium zucchini sliced into rounds or half-moons
  • 2 bell peppers sliced
  • 2-3 Tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Whole grain mustard for serving (optional)

Instructions

  • Preheat oven to 400°F. Add 1½ pounds yellow potatoes 2 cups baby carrots and 1 medium onion to a large sheet pan. (For easy cleanup line it with parchment paper first)
  • Drizzle with 2-3 Tablespoons 2-3 Tablespoons olive oil, 1 teaspoon salt, and ½ teaspoon black pepper and toss to coat
  • Roast for 15–20 minutes. Remove from oven and add 16 ounces kielbasa, 2 bell peppers, and 1 medium zucchini
  • Spread into an even layer. Return to oven and roast for 20–25 minutes, stirring halfway through, until vegetables are tender and lightly browned and potatoes are fork tender.

Notes

Serve with mustard on the side, if desired.
For best results, start the potatoes first since they take longer to cook than the other ingredients.
