Macerated Strawberries (No-Cook Strawberry Sauce)

These easy macerated strawberries are made by tossing fresh strawberries with a little sugar and lemon juice. As the berries sit, they release their natural juices and create a sweet, syrupy strawberry topping that’s perfect for pancakes, waffles, cheesecake, shortcake, or ice cream.

Ingredients

  • 3 cups fresh strawberries hulled and sliced
  • 2-3 Tablespoons granulated sugar
  • 1 teaspoon lemon juice optional but recommended
  • pinch of salt optional

Instructions

  • Place the sliced strawberries in a medium bowl.
  • Sprinkle the sugar over the strawberries and add lemon juice and a pinch of salt if using.
  • Gently toss to coat the berries.
  • Let the strawberries sit at room temperature for 20–30 minutes, stirring once or twice.
  • As the strawberries sit, the sugar will draw out their natural juices and create a sweet strawberry sauce.

Serve immediately or store in an airtight container in the refrigerator for up to 3 days.
Taste the strawberries before adding sugar. If they are very sweet, you may only need 2 tablespoons.
The longer the strawberries sit, the more juice they will release.
For a slightly thicker sauce, lightly mash a few of the berries with the back of a spoon before serving.
This recipe makes about 2 cups of strawberry sauce.
