Macerated Strawberries (No-Cook Strawberry Sauce)
These easy macerated strawberries are made by tossing fresh strawberries with a little sugar and lemon juice. As the berries sit, they release their natural juices and create a sweet, syrupy strawberry topping that’s perfect for pancakes, waffles, cheesecake, shortcake, or ice cream.

- 3 cups fresh strawberries hulled and sliced
- 2-3 Tablespoons granulated sugar
- 1 teaspoon lemon juice optional but recommended
- pinch of salt optional
Place the sliced strawberries in a medium bowl.
Sprinkle the sugar over the strawberries and add lemon juice and a pinch of salt if using.
Gently toss to coat the berries.
Let the strawberries sit at room temperature for 20–30 minutes, stirring once or twice.
As the strawberries sit, the sugar will draw out their natural juices and create a sweet strawberry sauce.
Serve immediately or store in an airtight container in the refrigerator for up to 3 days.
• Taste the strawberries before adding sugar. If they are very sweet, you may only need 2 tablespoons.
• The longer the strawberries sit, the more juice they will release.
• For a slightly thicker sauce, lightly mash a few of the berries with the back of a spoon before serving.
This recipe makes about 2 cups of strawberry sauce.
