Leftover Pulled Pork Quesadillas

- 3 large burrito sized flour tortillas
- non-stick cooking spray
- 1 ½ cups shredded cheddar cheese
- 2 cups leftover pulled pork
- 3 Tablespoons of your favorite bbq sauce
Preheat oven to 425°F. Spray one side of the tortilla with nonstick cookie spray. Flip the tortilla so the sprayed side is face down on a rimmed baking sheet.
Layer a portion of the shredded cheese, then the pork, and a drizzle of bbq sauce (if using) on one half of the tortilla. Add an additional sprinkling of cheese. Fold the tortilla in half and lightly press with a spatula to bring together.
Repeat with the remaining two tortillas.
Place in the oven and cook for 7-8 minutes until the bottom is light golden brown. Use a spatula to flip the tortillas to the other side. Cook for another 2-3 minutes until lightly toasted.
Remove from the oven. Cut each quesadilla into 3 wedges, making 9 wedges total. Serve with your choice of toppings.
Substitutions: Monterey Jack is another great cheese to use.
Tips: If your pulled pork already has barbecue sauce in it, you can omit the additional sauce, or make it saucier. It's up to you!
If you're making pulled pork quesadillas for one you can make these in a skillet over medium heat on the stovetop.
