Grilled Sweet Potato Wedges with Smoky Mayo Dipping Sauce

Ingredients

  • 4 large sweet potatoes peeled & halved lengthwise
  • ½ teaspoon salt
  • 2 tablespoon melted butter
  • 2 tsp. BBQ seasoning blend of your choice

For the dipping sauce (optional)

  • ¼ cup bbq sauce
  • ¼ cup mayonnaise
  • 2 drops liquid smoke optional

Instructions

  • Put sweet potatoes in a large pot and add enough water to cover the potatoes. Bring to a boil and cook about 8-10 minutes, until fork-tender but not entirely cooked. Drain well and let cool.
  • Cut each half into four pieces.
  • Preheat grill to medium heat. Place potato wedges on the grill and cook, turning once or twice until potatoes are cooked through, about 10 minutes.
  • Remove from grill into a large bowl. Add melted butter and toss gently. Sprinkle with ½ teaspoon salt and BBQ seasoning.

To make the smoky mayo dipping sauce

  • Combine mayo and bbq sauce in a small bowl. Add 1-2 drops of liquid smoke (optional)
