Grilled Sweet Potato Wedges with Smoky Mayo Dipping Sauce
Grilled Sweet Potato Fries are a healthy summertime grilling option! Serve roasted sweet potato wedges at your get togethers, neighborhood BBQ or dinner!
Put sweet potatoes in a large pot and add enough water to cover the potatoes. Bring to a boil and cook about 8-10 minutes, until fork-tender but not entirely cooked. Drain well and let cool.
Cut each half into four pieces.
Preheat grill to medium heat. Place potato wedges on the grill and cook, turning once or twice until potatoes are cooked through, about 10 minutes.
Remove from grill into a large bowl. Add melted butter and toss gently. Sprinkle with ½ teaspoon salt and BBQ seasoning.
To make the smoky mayo dipping sauce
Combine mayo and bbq sauce in a small bowl. Add 1-2 drops of liquid smoke (optional)
