Cut 3-4 pounds beef chuck roast into 4 large pieces and add to a slow cooker.
Add 2 cups beef broth, ½ cup low-sodium soy sauce, 1 teaspoon dried rosemary, 1 teaspoon dried thyme, 1 teaspoon garlic powder, 1 bay leaf and 5 whole peppercorns.
Cover and cook on high for 5-6 hours or until the beef is tender and easily shreds.
Use a large fork or tongs to remove the meat from the broth and transfer to a platter. Shred with a fork and return the beef and juices to the slow cooker.
Pour about ½ cup broth into small cups for dipping and serve on Crusty French style rolls.
Tip: I like to make this a day ahead of time so I can refrigerate it and skim the fat off the top and reheat.
Substitutions:
Top sirloin roast can be used in place of chuck roast.
Low sodium beef broth can be used, as can beef bouillon.
