- 1 pound pork tenderloin
- 2 bell peppers cored and sliced
- ½ large yellow onion cut in half and sliced into half moons
- 2 Tablespoons olive oil
- 8 flour tortillas
- 1 lime
- FOR THE SEASONING
- 2 teaspoon chili powder
- 2 teaspoon dried oregano
- 1 teaspoon ground cumin
- ½ teaspoon salt
- 1 teaspoon paprika
- ½ teaspoon ground black pepper
- ½ teaspoon garlic powder
- ¼ teaspoon cayenne pepper
Make seasoning: Mix all seasoning ingredients in a small bowl.
Prep: Slice peppers and onion. Trim pork and cut into thin strips. Toss pork with oil and 1–2 teaspoons seasoning.
Cook pork: Heat a large skillet over medium-high heat. Cook pork 3–4 minutes per side until internal temperature reaches 145°F. Remove from pan.
Cook vegetables: Cook peppers and onions 4–5 minutes until tender. Return pork to skillet and cook 1–2 minutes to combine. Squeeze lime juice over top before serving.
• Slice pork thinly for best tenderness
• Don’t overcrowd the skillet
• Boneless pork chops can be used instead of tenderloin
To make as a freezer meal: Make the seasoning. In a large bowl, add the prepped pork tenderloin, sliced peppers and onions. Season with the olive oil and a few teaspoons of your prepared fajita seasoning. Add the mixture to a gallon sized freezer bag. Label it! Lay flat to freeze.
To cook from a freezer meal: Thaw overnight in the fridge. Cook in a large skillet over medium high heat until pork is cooked to 145 degrees and veggies are tender, stirring occasionally.
