Easy Cowboy Caviar Dip

This easy Cowboy Caviar Dip combines black beans, corn, peppers, avocado, and a tangy homemade dressing for the perfect party appetizer, taco night side dish, or summer potluck recipe.

Ingredients

For the Cowboy Caviar

  • 3 cups black beans drained and rinsed
  • 15 ounce can whole kernel corn, drained
  • ¼ cup red onion minced
  • ½ red bell pepper finely diced
  • ½ green bell pepper finely diced
  • 1 jalapeño seeded and finely minced (optional)
  • cup fresh cilantro leaves lightly chopped

For the Dressing

  • ¼ cup olive oil
  • 2 Tablespoons fresh lime juice
  • 2 teaspoons honey
  • 1 teaspoon minced garlic
  • 1 teaspoon salt
  • ½ teaspoon smoked paprika
  • ½ teaspoon black pepper

For Serving

  • 1 large avocado diced
  • Tortilla chips for serving

Instructions

  • In a large bowl, combine the 3 cups black beans, 15 ounce can whole kernel corn, drained, ¼ cup red onion, ½ red bell pepper, ½ green bell pepper, 1 jalapeño and ⅓ cup fresh cilantro leaves.
  • In a small bowl or mason jar, whisk together ¼ cup olive oil, 2 Tablespoons fresh lime juice, 2 teaspoons honey, 1 teaspoon minced garlic, 1 teaspoon salt, ½ teaspoon smoked paprikaand ½ teaspoon black pepper
  • Pour the dressing over the bean mixture and toss well to combine.
  • Refrigerate for at least 30 minutes to allow the flavors to blend.
  • Just before serving, gently stir in 1 large avocado, diced. Serve with tortilla chips.

Notes

  • Fresh sweet corn may be substituted for canned corn (it's fabulous). Use about 2 cups fresh corn kernels.
  • To make ahead, prepare the bean mixture and dressing separately and refrigerate. Toss together before serving and add avocado just before serving.
  • This recipe can also be served as a side salad for tacos, grilled chicken, burgers, or fajitas.
  • Store leftovers in an airtight container in the refrigerator for up to 4–5 days.
