Makes 24 cookies
- 2 ½ cups all-purpose flour
- 2 teaspoons baking soda
- ½ teaspoon salt
- 1 ¼ cups granulated sugar
- 8 ounces cream cheese softened but not melted
- ½ cup unsalted butter room temperature
- 2 large eggs
- 1 teaspoon vanilla extract
- ¼ cup powdered sugar
Preheat the oven to 350°F and line two sheet pans with parchment paper.
Combine the 2 ½ cups all-purpose flour, 2 teaspoons baking soda, and ½ teaspoon salt in a large mixing bowl. Set the mixture aside.
In the bowl of your mixer, cream together the 1 ¼ cups granulated sugar, 8 ounces cream cheese, and ½ cup unsalted butter until light and fluffy, about 3-4 minutes. Add the 2 large eggs and 1 teaspoon vanilla extract.
Slowly add the flour mixture to the cream cheese mixture.
Scoop heaping tablespoons of dough onto the sheet pan, leaving about 1 inch between each cookie.
Bake for 13-15 minutes, or until the edges of the cookies begin to turn golden brown. Transfer the cookies to a cooling rack and let them cool completely.
Sprinkle ¼ cup powdered sugar over the cookies and enjoy.
Make Ahead: If you intend to make the cookies within 24-48 hours, you can make the dough and form the scoops, then chill them in the refrigerator until ready to bake.
To freeze cookie dough for longer, make the dough and portion onto parchment lined sheet pans. Place them in the freezer to flash freeze for 2-4 hours. Transfer frozen scoops of dough in an airtight container or a Ziplock bag and freeze for up to 3 months.
To cook from frozen: Defrost in the refrigerator overnight before baking. Note: If layering, it is recommended to place a layer of parchment paper between the layers, so they don’t stick together as much when defrosting.
