Breakfast Sliders with Honey Butter Glaze

Ingredients

  • 12 dinner rolls
  • ½ large red onion finely chopped
  • 1 stick butter room temperature - for sauteing and buttering sliders
  • 1 pound breakfast sausage
  • 9 large eggs
  • Salt and black pepper to taste
  • 1 Tablespoon water
  • 8 ounces cream cheese
  • 6 slices sharp cheddar cheese about 8 ounces
  • 6 slices of ham about 6 ounces

For the Honey Butter Glaze

  • 2 Tablespoons butter melted
  • 2 Tablespoons honey
  • 1 teaspoon Everything seasoning optional

Instructions

  • Preheat oven to 350°F. Grease a 9x13 inch baking dish with cooking spray.
  • Use a serrated bread knife to slice the dinner rolls in half horizontally, keeping the tops and bottoms intact as much as possible.
  • Add the onions to a medium sized non-stick pan or cast iron skillet. Cook until the onions start to soften and become translucent. Add the sausage to the onions and cook, breaking it into pieces until it's no longer pink.
  • While onions & sausage are cooking, crack eggs into a large bowl and add a little salt and pepper. Add a pinch of salt and a dash of pepper to the eggs.
  • Whisk the eggs thoroughly to incorporate air (this will keep your eggs nice and fluffy). If the pan is dry, add a tablespoon or so of water.
  • Reduce the heat to medium low. Add the eggs to the pan. Cover with a lid and cook for 2-3 minutes. Use a spatula to move the eggs around as they cook, combining the sausage and egg mixture. (You'll let the raw eggs flow into the spaces you push aside. It's kinda fun.)
    Cook until the eggs are set, fluffy and moist.
  • To make the sliders, spread a thin layer of cream cheese on the bottom half of the rolls.
    Then, layer the scrambled egg mixture, topped with sliced cheese, and ham.
    Butter the underside of the roll tops before placing them on top of the sliders
  • Combine melted butter and honey, then brush the glaze over the top of the assembled sliders.
    If using seasoning, sprinkle over the butter mixture.
  • Cover with aluminum foil and bake in the preheated oven for about 15-20 minutes or until the sliders are heated through and the cheese is melted.
  • Remove the foil and bake for an additional 5-7 minutes or until the tops are golden and slightly crispy.
    Allow to cool slightly, then cut with a serrated knife and serve.

Notes

To assemble ahead of time:  After assembling the sliders with eggs, sausage, ham, cheese, and cream cheese, wrap them in foil or cover with plastic wrap and refrigerate up to 24 hours.
To reheat, preheat your oven to 350°F, cover in foil, and heat for about 15-20 minutes until they are heated through.
Alternatively, you can microwave them in 30-second intervals until warmed to your liking.
To freeze breakfast sliders for later: After assembling, wrap each slider individually in plastic wrap and then in aluminum foil. Place them in an airtight container or freezer bag. They can be frozen for up to 2-3 months.
To reheat, thaw the sliders in the refrigerator overnight, then follow the reheating instructions mentioned in the first question.
