Banana Bars with Cream Cheese Frosting
These banana bars are soft, sweet, and topped with a creamy frosting—an easy way to use up ripe bananas and make a dessert everyone loves.

For the Bars
- 2 large eggs
- 1 cup granulated sugar
- ½ teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1 ½ cups mashed ripe bananas about 3–4 bananas
- ½ cup vegetable oil
- 1 ½ cups all-purpose flour
- Non-stick cooking spray
For the Frosting
- 4 ounces cream cheese softened
- ¼ cup butter softened
- ½ teaspoon vanilla extract
- 2 cups powdered sugar
To Make the Bars
Preheat oven to 350°F. Grease a 9×13-inch baking pan and set aside.
In a large bowl, whisk together 2 large eggs 1 cup granulated sugar.
Add 1 teaspoon vanilla extract, 1 ½ cups mashed ripe bananas and ½ cup vegetable oil. Stir until combined.
Add 1 ½ cups all-purpose flour, 1 teaspoon baking soda and ½ teaspoon salt. Mix just until incorporated. Do not overmix or your bars will be tough.
Pour batter into prepared pan and spread evenly.
Bake for 20–25 minutes, or until a toothpick inserted in the center comes out clean.Let cool completely before frosting.
To Make the Cream Cheese Frosting
Beat 4 ounces cream cheese and ¼ cup butter until smooth.
Add ½ teaspoon vanilla extract.
Gradually mix in 2 cups powdered sugar until fluffy and spreadable.
Spread over cooled bars, slice, and serve.
- Use very ripe bananas for best flavor. The uglier the better!
- Bars will be soft and tender - don’t overmix or overbake.
- Store in the refrigerator for up to 5 days.
- Freeze unfrosted bars for up to 2 months.
