- 4 cups fresh cubed watermelon
- ⅓ cup thinly sliced red onion
- 2 Tablespoons chopped fresh mint
- 4 ounces crumbled feta cheese
- 5 ounces package arugula
- 2 ounces store bought lemon Vinaigrette
For ease of preparation, I use a bottled salad dressing. Some commonly found grocery store varieties are Marzetti Simply Dressed Lemon Vinaigrette, Newman's Own Citrus Splash or Panera's Mediterranean Lemon Vinaigrette.
