Ingredients

  • 1 medium spaghetti squash
  • 2 teaspoons extra virgin olive oil
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon onion powder
  • ¼ cup grated Parmesan cheese
  • 2 Tablespoons fresh parsley chopped

Instructions

  • Begin by cutting the spaghetti squash in half lengthwise. Use a sharp knife with a good grip on the handle. (You may find it easier to microwave the squash for a minute or two to soften it slightly.)
    Using a sturdy spoon, scoop the seeds out are remove the stringy pulp in the center of the squash. Discard the seeds.
  • Brush the cut sides of each squash half with 1 teaspoon of olive oil.
    Sprinkle the salt, black pepper, and onion powder evenly over the cut sides.
  • Place the prepared squash halves cut side up in the air fryer basket. Depending on the size of your air fryer, you may need to cook them one at a time.
    Cook at 375°F for about 20-25 minutes or until the spaghetti squash is tender and the edges are slightly browned. The exact time may vary depend on your air fryer and the size of your squash.
  • Once the squash is done, carefully remove it from the air fryer. Let cool for several minutes.
    Use a fork to scrape the flesh of the squash into spaghetti-like strands. The cooked squash should easily separate into strands.
  • Sprinkle with squash with grated Parmesan cheese. Garnish with freshly chopped parsley.

Notes

Select a medium-sized spaghetti squash that feels heavy for its size. This indicates that it's likely to be ripe and full of flavor.
To ensure even cooking, try to cut the squash into two halves of roughly equal size.
Microwave Softening (Optional): If you're finding it particularly challenging to cut the squash, you can soften it in the microwave for a few minutes. Pierce the whole squash with a fork or knife in a few places to create steam vents, then microwave it on high for 3-5 minutes. This softens the shell slightly and makes it easier to cut.
Storage: Store leftover it in the refrigerator. It can be kept for up to 3-4 days. You may need to drain it before using as it frees up liquid.
