Ingredients
3multi-colored bell peppershalved lengthwise, and hollowed out
Ranch dressing for drizzlingoptional; not included in nutrition below.
Instructions
Preheat the oven to 375°F.
In a large mixing bowl, combine the chicken, cream cheese, 1⁄3 cup shredded cheese, 1⁄4 cup diced green onion, buffalo sauce, and ranch seasoning.
Stir until the ingredients are combined and chicken is fully coated in the buffalo sauce.
Scoop about 1⁄4-1⁄3 cup of the buffalo chicken mixture into a hollowed out pepper. Repeat with the other five halves.
Place stuffed peppers on a rimmed baking sheet. Sprinkle with the remaining 2 Tablespoons of cheese and cover with foil.
Bake for 45 minutes. Remove from the oven, plate and drizzle with ranch and sprinkle with diced green onion.
To make in the air fryer:
Follow steps 1-4. Spray the basket of your air fryer with cooking spray and place each pepper in the basket of the air fryer, with the chicken mixture facing up. Air Fry at 350 degrees F for 8 minutes.Open the air fryer and sprinkle the peppers with the remaining 2 Tablespoons of shredded cheese and air fry for another 2-3 minutes.Remove from the air fryer and plate. Drizzle with ranch and sprinkle with remaining 2 tablespoon diced green onion.
